Position Overview : Legends / ASM Global, the leader in privately managed public assembly facilities, has an excellent and immediate opening for a Cook at the Long Beach Convention and Entertainment Center. The Cook will be responsible for preparing food in a timely, efficient, sanitary, and consistent manner. This role requires the ability to work in a fast-paced, high-pressure environment while maintaining strong organizational skills to handle job duties quickly and effectively. The Cook must be a team player, adhere to safety procedures, and be comfortable working in a kitchen with high heat levels.

Please note that the Long Beach Convention and Entertainment Center Food and Beverage employees are covered by a collective bargaining agreement with Unite Here Local 11, and union membership is a condition of employment.

Duties and Responsibilities :

• Set up stations and gather all necessary supplies for menu preparation.
• Prepare a variety of food items including meat, seafood, poultry, vegetables, and cold food items.
• Properly label and date food items for storage.
• Maintain sufficient levels of food products to ensure a smooth service period.
• Assist with the cleaning, sanitation, and organization of the kitchen and walk-in coolers.
• Consistently comply with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
• Use food preparation tools following manufacturer instructions.
• Close the kitchen correctly, following the closing checklist for kitchen stations.
• Maintain and sanitize work areas, coolers, and storage spaces.
• Assist with additional responsibilities as assigned by the Executive Chef or Sous Chef.
• Prepare dishes for customers with food allergies or intolerances.
• Ensure all storage areas are tidy, and products are appropriately stored.
• Adhere to safe and hygienic food handling practices.
• Return dirty food preparation utensils to designated areas.
• Assist with any other tasks as assigned by the Executive Sous Chef.
