Assistant Kitchen Manager

Goal : In support of the Kitchen Manager , the Assistant Kitchen Manager's role is to ensure Beer Barrel kitchen operations are held to company standards . Monitoring our most important metrics, including cost of goods , kitchen staffing, cleanliness, health and sanitation, safety, ticket times , and the kitchen training program , is the comprehensive goal of this position . By evaluating our overall kitchen performance and collaborating with the Kitchen Manager to implement improvements, you ensure quality food is getting to our guests promptly.

Responsibilities :

• Ensure food quality, presentation, and ticket times are the top priorities for each shift
• Minimiz e waste through proper training, weekly review / adjustments of prep lists, and department pre / post shift
• Collaborate with kitchen manager on weekly morale - boost ing ideas and weekly focuses
• Keep cleanliness as an ongoing pr iority with weekly and daily cleaning, identify and assign larger tasks, checklists , and follow through
• Responsible for health and safety compliance with respect to Health department regulations , including ongoing training with team members, addressing issues at hand, maintaining temp logs, and storag e hierarchy
• Report directly to the kitchen manager and participate in weekly 1-on-1 meetings to keep communication strong
• E nsure quality food is leaving the kitchen at all times by floating from station to station, supporting where needed throughout the shift
• Oversee the prep team while ensuring quality is there and recipes are being followed
• Assign temp chart completion and ensure they are completed four times a day and are being done correctly
• Work with KM on cross-training plans and new - hire training
• Responsible for overseeing new-hire training. If you are not the trainer, you will check in each shift on progress and needs
• Ensure each shift that all measuring scoops are in place and used accurately.
• Responsible for food orders - C&M, SOFO, Ciminillo's
• Actively coach team members to continuously improv e skillsets and knowledge
• Conduct roll call and make sure staff are 100% in uniform before allowing clock in
• Responsible for nightly check-outs at each station and ensuring their area is approved before allowing the team to leave when the KM is not closing
