Proven ability to safely and efficiently shuck a variety of shellfish, with knowledge of identifying shellfish that are safe for consumption. Proficient in using a variety of knives to prepare seafood, including filleting fish and breaking down shellfish, with precision and confidence. Experience in cleaning and preparing whole fish for cooking, including gutting, scaling, and deboning, while maintaining safe and hygienic practices to minimize waste Comfortable following recipes and working quickly while maintaining high standards of quality and presentation.
