TheModern Stone Age Kitchenis a scratch-made restaurant, sourdough bakery, and coffee shop located in historic Chestertown, Maryland. We transform familiar foods into their healthiest versions using ancestral and traditional techniques - from wild sourdough fermentation and nose-to-tail butchery to nixtamalization and fermented dairy. Our goal is simple : to reconnect people with real food, prepared the way its meant to be.
We are looking for a Kitchen Manager to lead our talented back-of-house team and carry forward our mission of nourishing, ethical, and sustainable food. This is a unique opportunity to join a fast-growing, purpose-driven restaurant with national recognition and a deeply loyal community.
Key Responsibilities
- Oversee all kitchen operations at 236 Cannon Street, including prep, production, service, and sanitation
- Lead, train, and mentor a team of cooks, apprentices, and interns
- Maintain consistency, quality, and adherence to the Modern Stone Age philosophy
- Collaborate with Dr. Bill Schindler on menu development grounded in ethnographic food research
- Manage ordering, inventory, and vendor relationships with local farms and suppliers
- Ensure compliance with food safety, sanitation, and workplace standards
- Track and optimize food cost, portioning, and waste
- Support a positive, educational, and collaborative kitchen culture
- Work alongside ownership to refine systems, processes, and workflow for efficiency and growth
Qualifications
Proven experience as a Kitchen Manager, Sous Chef, or Executive Chef in a high-quality, scratch kitchenStrong leadership and communication skills; comfortable training and motivating staffPassion for real food, fermentation, local sourcing, and traditional food preparationAbility to manage budgets, control costs, and maintain consistent production standardsServSafe certification preferred (or ability to obtain)Positive, adaptable attitude with a desire to grow in a mission-driven environmentCompensation & Benefits
