Job Summary
Bring your passion, plate it with purpose, and lead with flavor! At Pratt Institute, we don't just feed our community—we fuel creativity and imagination through food. As the culinary leader for one of our campuses, you will oversee all foodservice, including residential, retail, and catering, inspire your team, and deliver a dining experience that delights and excites all of your guests. Think of it as running a kitchen where food meets art—and you're the head curator.
Key Responsibilities
Plan&Create : Develop menus that balance flavor, nutrition, and innovation, bringing excitement to every plate while following established guidelines.
Perfect the Recipe : Ensure recipes, portioning, and presentation are always on-point—tasting daily to guarantee quality and consistency.
Lead the Brigade : Train, mentor, and inspire staff in culinary technique, food safety, and the art of hospitality.
Keep it Fresh : Oversee cleaning and maintenance schedules so the kitchen shines brighter than a polished sauté pan.
Stock the Pantry Wisely : Manage inventory to stay within guidelines while ensuring ingredients are always fresh and ready to go.
Reduce Waste, Elevate Taste : Make smart, creative decisions with leftovers in line with company standards.
Stay Compliant : Champion food safety and sanitation regulations, acing NYC inspections and third-party audits.
Play it Safe : Follow facility and company safety policies, ensuring a secure and healthy environment.
Grow Together : Actively participate in team meetings, development sessions, and professional programs to sharpen skills and strengthen collaboration.
Qualifications
A.S. or equivalent experience
MUST HAVE current NYC DOH Food Handlers Certificate
Six+ years of progressive culinary / kitchen management experience
Strong knowledge of food trends, quality, production, sanitation, food cost controls, and presentation
Experienced with Microsoft Office (Word, Excel, PowerPoint), Outlook, and internet tools
Catering experience a plus
High-volume, complex foodservice operations experience highly desirable
ServSafe certification highly desirable
Hands-on chef experience required—must be ready to get those knives moving!
