Requirements :
High school diploma or GED equivalentProfessional diploma or food services management1-2 years of hands-on butcher experienceAdvanced and accurate knife handling skillsMinimum 2+ years of cooking experience with advanced knowledge of food trends, quality, production, sanitation, presentation, and food cost controlWorking knowledge of fire extinguishersEffective communication and interpersonal skillsExcellent organizational skills and ability to multitaskSafeServ Certification compliantAbility to stand for long periods of time in a busy kitchen environmentAbility to lift up to 50 pounds occasionally and 35 pounds regularlyExposure to heat, fire sparks, and noise in the kitchenAdherence to personal appearance standardsResponsibilities
Depending on the shift, manage all opening and closing shift proceduresDirect staff to clean, pull out shelves, and label all proteinsEnsure correct storage and labeling of food itemsMaintain cleanliness and organization of the meat station, refrigeration compartments, and ovenTrack and report any food or fuel wastePromptly report any equipment or maintenance issuesPersonnel :
Train with Chef de Cuisine on all aspects of the kitchen's operations within 3 months of hireAble to assume all duties while Chef is absentCollaborate with Chef to train and develop staff through orientations and ongoing feedbackFoster a positive and respectful work environmentAid in the training of new employees on restaurant procedures and expectationsHealth and Safety :
Ensure health and safety regulations are strictly observedAdhere to and adapt to changes in company policies, communicating changes to the teamExercise good judgment in decision-making and report issues to Chef and General ManagerMaintain refrigeration temperature controlPromote a safe and clean work environment by following sanitation and organizational practicesGuest Service :
