The Role
The Lead Meal Prep Chef / Culinary Manager is a critical leadership position responsible for all aspects of food production, quality control, and kitchen operations. Unlike a traditional restaurant Executive Chef, this role requires a strong focus on efficiency, standardization, and high-volume batch cooking while maintaining exceptional culinary standards. Weekend availability required.
Key Responsibilities
I. Culinary & Production Management (60%)
Batch Cooking & Standardization : Develop and execute production schedules for high-volume, weekly meal batches to maximize efficiency and minimize waste.
Recipe Development & Costing : Create and test new menu items (in collaboration with the owner / nutritionist) that are scalable, profitable, and meet specific dietary profiles (e.g., Keto, Paleo, High-Protein, Calorie-Smart).
Quality & Consistency : Establish strict quality control standards for ingredient receiving, prep, cooking, and final plating / packaging to ensure every meal meets the G&G standard.
Inventory & Ordering : Manage all ingredient ordering, vendor relationships, and inventory rotation (FIFO) to ensure optimal freshness and minimize food costs.
II. Leadership & Operations (40%)
Team Leadership : Recruit, train, schedule, and manage kitchen staff (Prep Cooks, Dishwashers, Packers), fostering a positive, disciplined, and productive work environment.
Kitchen Compliance : Ensure strict adherence to all local, state, and federal health and safety regulations, including HACCP and ServSafe standards.
Efficiency & Improvement : Implement lean kitchen principles and workflows to continuously improve speed, accuracy, and labor efficiency across all production stages.
Equipment Maintenance : Oversee the proper use and maintenance of all commercial kitchen equipment.
Required Qualifications
Experience : 3+ years of experience in a high-volume food production environment (commissary kitchen, large-scale catering, or established meal prep company).
Leadership : 2+ years of management experience (Sous Chef, Head Cook, or Kitchen Manager).
Culinary Skills : Demonstrated proficiency in classic and modern cooking techniques with a strong understanding of nutritional cooking and specific dietary restrictions.
Certifications : Active ServSafe Manager Certification (or equivalent) required.
Technical Skills : Proficient with menu costing software, Microsoft Office / Google Suite, and production planning tools.
Physical Demands : Ability to lift 50+ lbs and stand for extended periods.
