Job Summary
The Certified Dietary Manager (CDM) is responsible for planning, directing, and coordinating food service operations to ensure safe, high-quality nutrition and meal services in healthcare, long-term care, or institutional settings. The CDM leads dietary staff, oversees compliance with regulations, develops menus, and collaborates with dietitians and healthcare providers to support patient and resident well-being.

Key Responsibilities
Food Service Management
Oversee daily operations of the dietary department, including meal preparation, food safety, and sanitation.
Plan and develop menus in accordance with nutritional guidelines, physician directives, and resident / patient preferences.
Maintain accurate food production records and inventory controls.
Staff Supervision
Hire, train, schedule, and evaluate dietary staff performance.
Conduct regular staff meetings to ensure effective communication and policy updates.
Ensure proper food handling and kitchen safety training.
Regulatory Compliance
Ensure compliance with local, state, and federal food safety and health regulations (e.g., USDA, FDA, CMS).
Prepare for and participate in health inspections, audits, and surveys.
Maintain documentation of all food service activities and corrective actions.
Collaboration & Communication
Work closely with registered dietitians, nursing staff, and physicians to implement individual nutrition care plans.
Communicate regularly with residents, patients, and families to address dietary concerns and preferences.
Budget & Inventory Management
Assist in the preparation and oversight of departmental budgets.
Monitor food, supply, and labor costs; implement cost-control measures.
Order and maintain appropriate food and supply inventory levels.
Required Qualifications
Certification : Certified Dietary Manager (CDM) credential through the Association of Nutrition & Foodservice Professionals (ANFP).
Education : High school diploma or GED required; associate degree in nutrition, food service management, or related field preferred.
Experience : Minimum 2 years of food service or dietary management experience in healthcare or institutional setting.
Knowledge : Understanding of nutrition, therapeutic diets, food safety standards, and sanitation regulations.
Skills :
Strong leadership and team management.
Excellent organizational and problem-solving skills.
Effective communication and interpersonal abilities.
Proficient in food service software and Microsoft Office Suite.
Working Conditions
May involve standing for extended periods, lifting up to 40 lbs, and working in hot / cold kitchen environments.
Requires flexibility to work weekends, holidays, or varying shifts based on facility needs.

Director of Nutrition Services / Administrator / Registered Dietitian (depending on organizational structure)
