Small State Provisions, an award-winning organic bakery located in the heart of New England. Founded in 2019, Small State Provisions has grown rapidly and now has two locations.  Small State Provisions is an employee centric bakery that is focused on building a sustainable business and creating deep community impact.

This role is a junior leadership role that will be responsible for leading the day-to-day baking and production needs of the bakery’s confections.  Key items that this role will be responsible for include cookies, quick breads, pies, cakes, and other items that are developed for the bakery.  The Production Lead Baker will be responsible for overseeing the confections team, developing production lists, planning workflow, ensuring accurate recipe execution at all levels, while working closely with team to develop their baking skills and acumen.

The Lead Production Baker will manage all aspects of the daily confections shift to ensure that the team is working efficiently and accurately to meet the demands of the bakery.  This role will mentor and develop the baking skills of the dedicated team and delegate production items, set priorities and ensure consistent day to day results.

Core Responsibilities : In addition to daily production baking and executing recipes, this role will :

  • Set production schedules for the team and prioritize daily task lists and responsibilities for the confections team to maximize efficiency and production workflow.
  • Collaborate with Director of Bakery Operations to set team schedules that maximize efficiency and coverage during the week and meet the demands of the bakery production.
  • Train, develop and nurture the baking skills of the confections team to ensure consistent results day to day.
  • Work with the Director of Bakery Operations to forecast weekly quantities and PARS.
  • Collaborate with Director of Bakery Operations, FOH, and owner to develop new bakery menu items and recipes from concept to implementation.
  • Manage updates to recipes to ensure accuracies and batch size consistency.
  • Manage key inventory items for the station and effectively communicate all inventory needs to purchasing lead.
  • Setting cleaning and organization practices for the team to ensure strict hygiene and food safety standards.

  • Increased weekly production of CORE items within the current weekly hours of the team
  • Development of team skills and efficiency in processes
  • Consistency in baking results across the team day to day
  • New menu item development and implementation

  • Qualifications :

  • 3+ years baking in professional bakery setting.
  • 2+ year managing small teams.
  • Ability to lift 50lbs
  • Ability to work weekends and major holidays
  • Ability to work early mornings
