Restaurant Manager (Wine-Focused, Sommelier Status Preferred)

Location : Chicago, IL

Compensation : $70,000 – $85,000 annually

Ithaki Estiatorio is a high-end Hellenic restaurant located in the heart of Chicago, dedicated to delivering an elevated dining experience inspired by the flavors and traditions of Greece. We emphasize authenticity, warm hospitality, and a refined wine and beverage program showcasing both Old World and emerging Greek producers.

Position Overview

We are seeking an experienced Restaurant Manager with a strong foundation in leadership, guest relations, and wine service. The ideal candidate will possess Sommelier (SOM) certification or equivalent status , and have the ability to train and inspire the team in both wine and service standards. This role requires balancing day-to-day floor management with a strategic focus on building a world-class wine culture within the restaurant.

Key Responsibilities

Lead, train, and mentor FOH staff to deliver seamless, gracious, and professional service.

Oversee daily floor operations, ensuring guest satisfaction and adherence to Ithaki service standards.

Develop and manage the restaurant’s wine program, including curation, purchasing, inventory, and staff education.

Conduct pre-shift wine / service training sessions to enhance team knowledge and confidence.

Collaborate with ownership and the beverage director to design seasonal pairings and wine events.

Handle guest recovery with professionalism and discretion.

Support scheduling, payroll review, and general administrative duties.

Foster a culture of hospitality, teamwork, and accountability.

Qualifications

3–5 years of management experience in upscale or fine dining environments.

Advanced wine knowledge; SOM certification or comparable status strongly preferred .

Strong interpersonal and leadership skills with the ability to inspire a team.

Excellent organizational and communication skills.

Proficiency in Toast POS systems, OpenTable reservation platform, and wine inventory software.

Must have availability to work nights, weekends, and holidays.

Compensation & Benefits

Salary Range : $70,000 – $85,000 (commensurate with experience)
