Job Summary :

The Garde Manager will prepare and present cold dishes and foods.

Supervisory Responsibilities :

Duties & Responsibilities :

  • Prepares salads, fruits, vegetables, cold meats, fish items, canapés, cold hors d'oeuvres, appetizers, and other cold dishes.
  • Prepares all pantry food items according to standard pantry recipes or, as otherwise specified by the supervisor, to ensure consistency of product to the guest; requires transportation of heavy food products.
  • Checks and controls the proper storage of products, especially on all fresh produce, checking on portion control to maintain quality products.
  • Keeps all refrigeration, storage, and working areas in clean working condition in order to comply with Health Department regulations.
  • Ensures that all equipment in working areas is clean and in proper working condition to comply with Health Department regulations.
  • Visually inspects, selects, and uses only the freshest fruits, vegetables, meats, and other food products of the highest standard in the preparation of all menu items.
  • Reads and employs math skills for following recipes.
  • Prepares requisition for supplies and food items for production in the workstation.
  • Performs other related duties as assigned.

Required Skills & Abilities :

  • Artistic ability and attention to detail to create visually appealing cold dishes.
  • Strong organizational skills to manage inventory, track supplies, and maintain a clean and orderly workstation.
  • Excellent written and verbal communication skills.
  • Ability to work independently.
  • Quick thinking and problem-solving abilities to address any issues that may arise.
  • Education & Experience :

  • High school diploma or equivalent is preferred.
  • Culinary or Apprenticeship program is preferred.
  • ServSafe certification.
  • Physical Requirements :

  • Prolonged periods of walking, standing, and sitting.
  • Must be able to lift up to 50 pounds at times.
