The Director of Restaurants supports the Property VP of Food & Beverage by providing leadership and strategic direction for their assigned restaurant venues and teams, in alignment with the MGM brand. They are responsible for guiding the restaurant management teams to achieve operational and financial objectives, overseeing staff performance, scheduling, and training, maintaining facilities to meet MGM Resorts service standards, and ensuring an exceptional dining experience with high levels of customer satisfaction. The day-to-day includes overseeing assigned venue restaurant leadership, including establishment and achievement of profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion; overseeing the implementation and execution of policies, operating procedures and training programs, directives, menus, work schedules, rules and regulations for the restaurant staff; interviewing, selecting, training, supervising, counseling and coaching restaurant staff for the efficient operation of the outlet. Driving employee engagement through coaching, training, and development; regularly reviewing and evaluating the degree of customer satisfaction of their assigned outlets, to recommend and provide feedback on new operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in competitive environment requires such change; utilizing resources provided by COE's to manage sales, drive profits, manage labor, and control expenses.

The ideal candidate will have a bachelor's degree preferred and 4+ years of prior relevant experience, including experience in a similar resort setting. They will possess thorough knowledge of all aspects of food and beverage, including concept planning, production, presentation, service, and controls. The candidate will have the ability to develop and maintain effective operational processes to achieve maximum efficiency while ensuring adherence to established guest service standards across multiple restaurant concepts. They will be skilled at actively influencing and driving collaboration with individuals or groups at various levels within and outside the organization. Additionally, they will provide strong leadership and direction, contributing to the success of each restaurant by engaging, developing, and mentoring individuals and teams.
