This is a Food Service Supervisor position that must possess the ability to plan, organize and direct the operations of the Food Service Program for the Sevier County Jails. This employee supervises directly or through subordinates a staff of Corrections Officers and inmate workers assigned to kitchen and laundry duties and consults with a State Registered Dietician in the planning of meals according to state guidelines.
The Food Service Supervisor shall be responsible for the ordering of food, food supplies, and cleaning and laundry supplies for the Sevier County Jails. The Food Service Supervisor shall be responsible for ensuring that Tennessee Corrections Institute guidelines pertaining to food service are met, maintaining the budget regarding the amount of funds expended on perishable, non-perishable and all cleaning supply items and for quality control and inventory of such items.
The Food Service Supervisor shall maintain all work records of all food service employees assigned to her / him and maintain records of special diets for inmates following the directions of the facility medical staff. As the Supervisor, the employees in this classification assist in providing meals for inmates housed in correctional facilities managed and operated by Sevier County.
Responsibilities
- Supervises and directs Food Service support staff during daily tasks
- Orders foods, food supplies, and cleaning products used daily
- Maintains employee time records and inmate dietary restrictions
- Prepares and serves meals for delivery to inmates three times per day.
- Prepares meals and sets up serving lines to provide meals for inmates according to established schedules.
- Cleans cooking equipment and utensils as necessary and upon completion of daily activities.
- Receives, stores and rotates food supplies and other inventory upon delivery.
- Operates dishwashing equipment to clean and sanitize trays, silverware, cups and plates as inmates complete meals.
- Sweeps and mops the kitchen and dining areas as needed and / or following each meal.
- Stocks milk containers and replenishes food on the serving line when necessary.
- Organizes and cleans freezers and coolers as required.
- Operates stoves, ovens, grills and steam tables in accordance with manufacturers' guidelines and operating instructions and cleans as necessary.
- Cleans tables and common areas in the dining facilities.
- Assists with supervising and directing the activities of inmates and / or trustees assigned to the kitchen and dining areas.
- Empties the trash as necessary and upon completion of daily activities.
- Performs related duties as required.
Requirements
Be at least eighteen (18) years of age;Be a citizen of the United StatesBe a high school graduate or possess its equivalency which shall include a general educational development (GED) certificate;Not having been convicted or pleaded guilty to, or entered a plea of nolo contendere to any felony charge or to any violation of any federal or state laws or municipal ordinances relating to force, violence, theft, dishonesty, gambling, liquor or controlled substances;Not have been released or discharged under any other than honorable discharge from any of the armed forces of the United States;Have such person's fingerprints on file with the Tennessee Bureau of Investigation;Have passed a physical and psychological examination by a licensed physician certified by the State of Tennessee;Have a good moral character as determined by a thorough investigation conducted by the Sheriff's office.Graduation from an accredited high school (mandatory) or graduation from an accredited college for higher education (preferred) (Associate or Bachelor Degree) in Nutrition, Food Industry Management, Criminal Justice, Law Enforcement or closely related field, and / or considerable experience working in an institutional food service setting;This employee must be a certified corrections officer in compliance with the minimum standards of the Tennessee Corrections Institute.Physical Requirements
