Job Summary : Prepares, cooks and serves meals for residents while maintaining standards of kitchen cleanliness

Essential Duties and Responsibilities :

Essential duties and responsibilities include the following. Other duties may be assigned.

  • Prepares all food according to the menu in a safe, sanitary manner
  • Insures proper preparation, portioning, and serving of foods according to standardized recipes
  • Prepares quality food products according to standardized recipes and menus
  • Prepares food in a timely manner at specified meal times
  • Assumes responsibility for total kitchen operations and handles all situations in the kitchen according to policy
  • Follows departmental procedures including sanitation, safety, and cleaning schedules
  • Follows proper cleaning procedures and storage of all dishes, utensils and cooking equipment
  • Ensures proper food temperatures are maintained and food is stored correctly
  • Records temperatures of foods and refrigerator / freezers daily turning in completed monthly report to the Compliance Officer
  • Ensures freshness and quality of all menu items
  • Ensures all food in refrigerator, freezer and dry storage are labeled, dated and rotated
  • Oversees proper food handling and utilization of all foods to prevent contamination, increase quality and reduce cost
  • Keeps workstation and equipment clean, organized, sanitized and sufficiently stocked
  • Suggest menu or recipe changes to utilize leftovers and other supplies
  • Ensures proper food rotation, making sure all open foods are dated and used or destroyed within the 3 day rule
  • Cleans all food service equipment, kitchen and storage areas
  • Coordinates work assignments of dietary attendants
  • Efficient use of time to complete assigned work
  • Must have the ability to work AMs, PMs, weekends and holidays

Requirements :

1. Must be able to relate to the elderly in a positive manner.

2. Must be able to easily lift and carry up to 50 lbs.

3. Must be able to stand, walk, stoop, and / or bend for periods of up to eight hours.

4. Has work experience of on-line cook in food services. Trained in appropriate techniques of resident care including nutritional monitoring and assessment, general nutrition, food production and service, sanitation, safety, and management.

5. Knowledge of therapeutic diets
