The Jammery Supervisor plays an essential role in overseeing operations within Southall’s Jammery — a space dedicated to preservation, culinary creativity, and seasonal programming. This position offers the opportunity to work closely with the Jammery Chef and Executive Chef, engaging with the seasons of Middle Tennessee to craft distinctive, product-driven culinary creations that highlight the bounty of our farm.
The Jammery Supervisor supports both the Preservation Kitchen and Demonstration Kitchen , ensuring excellence, consistency, and professionalism in all aspects of production and guest experiences.
Key Responsibilities :
- Supervise daily operations in both the Preservation and Demonstration Kitchens.
- Oversee full-scale production of preserved goods, including jams, pickles, and other seasonal products.
- Ensure products are prepared, filled, and canned in accordance with all HACCP standards and safety regulations.
- Maintain HACCP logs, daily testing, and verification records accurately.
- Ensure all kitchen areas are clean, sanitary, organized, and operating efficiently.
- Prepare all foods according to standard recipes to ensure consistency and quality.
- Collaborate with the Jammery Chef to execute demonstration kitchen events, including plated dinners, tastings, and educational programs.
- Ideate and facilitate menu items and product development in advance of production schedules.
- Coordinate closely with the Farm Team to align production with seasonal harvests and preservation opportunities.
- Order ingredients, packaging, and supplies in a timely manner to support production needs.
- Manage ingredient and retail inventory, including bottles, jars, and finished goods.
- Accurately perform and document monthly inventory counts.
- Oversee transfers and proper storage of retail products.
Skills and Experience :
Minimum of 5 years of experience in the culinary industry.Previous experience and working knowledge of food preservation required; continued education in preservation preferred.Strong organizational skills and ability to maintain a clean, efficient workspace.Conversational Spanish is a plus.Education and Requirements :
Culinary degree preferred, but not required.Ability to push, pull, and lift up to 50 pounds.Must be available to work weekends, evenings, and holidays as required.Ability to stand and walk for prolonged periods.Southall Farm and Inn is committed to a diverse and inclusive workplace.
