Ezio’s is a boutique Italian steakhouse specializing in dry-aged meats, handmade pastas, and a curated natural wine and spirits program. Our mission is to deliver an exceptional dining experience rooted in craft, integrity, and hospitality to bring a Michelin caliber dining experience that feels both elevated and personal.
We’re looking for a highly skilled and passionate Oyster Shucker to join our opening team. This role is ideal for someone who takes pride in precision, speed, presentation and someone who understands that every plate served represents the soul of our restaurant.
Experience is required, but a positive attitude is more important.

- Demonstrable shucking speed, precision, and presentation in a fine dining or high-volume setting
- Strong product knowledge and passion for oysters, shellfish, and raw seafood
- Impeccable hygiene and food safety standards
- A sense of pride in your craft and a team-first attitude
- Ability to work calmly and efficiently under pressure
- Flexible availability, including nights, weekends, and holidays
Responsibilities :
Expertly and efficiently shuck oysters and prepare raw bar items to orderMaintain the highest standards of cleanliness, product quality, and food safetyMonitor and manage raw bar inventory, ensuring optimal product rotation and freshnessPrepare mise en place for raw bar service, including sauces, garnishes, and seafood componentsExecute plating with consistency, elegance, and attention to detailEngage with the kitchen and service teams to ensure seamless coordination during serviceUphold Ezio’s commitment to craftsmanship, hospitality, and a clean, organized work environmentWork collaboratively and maintain a positive attitude in a fast-paced environmentAble to work nights, weekends, and holidays as neededPunctual, reliable, and respectful of the team and workspace
