DESCRIPTION OF WORK
An employee in this role is tasked with overseeing the assignment, participation, and instruction of inmates engaged in extensive food preparation, production, serving, and sanitation processes. This position involves leading and delivering on-the-job training in food service to inmates, who are responsible for a range of activities, including specialized meal preparation and cooking tasks. The employee must ensure that all operations adhere to established food safety and sanitation standards, maintain a safe working environment, and enforce security and custody regulations within the designated work area. Additionally, the role encompasses the requisitioning, receiving, and proper storage of food and supplies, as well as the preparation and maintenance of work records and inmate reports. Employees are also encouraged to participate in cross-training programs to gain comprehensive knowledge of all facets of the food service operation. The work is conducted with a significant degree of autonomy and is subject to review by a Corrections Food Service Supervisor, who assesses the overall efficiency and effectiveness of the operations.
