Essential Functions

Plans, directs, and supervises the activities of the dietary staff
Operates the dietary department in a safe and sanitary manner by ensuring compliance with Federal, State, and local regulations and following established policies and procedures.
Plans meals far enough ahead to minimize the need for food substations.
Works closely with facility dietitian to ensure meals meet the nutritional needs of the residents.
Ensures food supplies are appropriate and places orders when necessary.
Oversees food tray line to ensure trays are prepared according to diet cards in an efficient manner to meet scheduled meal and snack times.
Responsible for operating the Dietary Department within budgetary guidelines and limitations.
Assists in annual performance reviews for dietary staff. Provides guidance and education to staff regarding their performance.
Responsible for training and educating staff members.
Provides counseling and disciplinary action to dietary staff members as needed.
Follow established safety precautions when preforming tasks and using equipment and supplies.
Report all hazardous conditions and equipment along with any accidents / incidents to the Administrator.
Must answer and respond to call lights promptly and courteously when working in resident care areas.
Maintains the comfort, privacy and dignity of residents and interacts with them in a manner that displays warmth, respect and promotes a caring environment.
Communicates and interacts effectively and tactfully with residents, visitors, families, peers, and supervisors.
Attend and participate in meetings and in-services as directed or scheduled.
Supervisory Responsibility
This position supervises Cooks, Dietary Aides and other Dietary Staff
Work Environment
This job operates in a health care setting. This role requires regular walking to various locations around the facility while pulling or pushing dietary carts. This position works mostly in the dietary department which can experience extreme temperature changes from excessive heat in the cooking area to freezing temperatures in walk-in freezers.
This role may also come into contact with residents who may have contagious illnesses.
Physical Demands
While performing the duties of this job, the employee is regularly required to talk and hear. This position is very active and requires mobility, reaching, standing, walking, bending, kneeling, and stooping on a regular basis. The employee must frequently lift and / or move items weighing over 20 pounds.
Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus. Ability to read and write, the ability to understand and follow written and oral instructions / directions, ability to remain clam under pressure.
Position Type and Expected Hours of Work
This position is part of a health care facility that is open 24 hours a day, 365 days a year. Rotating shifts as well as holiday and work during inclement weather will be required.
Travel
On occasions may need to travel to and from various locations in and around the surrounding community.
Required Education and Experience
High school diploma or equivalent
Certified Dietary Manager (CDM) (or willingness to get it)
Food Sanitation Certification (or willingness to get it)
Preferred Education and Experience
One-year experience as Dietary Manager
Or past Nursing Home Cook experience and a desire to learn, lead, manage.
Additional Eligibility Qualifications
Experience in culinary skills or food service with ability to train cooking and food preparation.
Must be able to maintain confidentiality regarding patient and company proprietary information.
Must have the ability to relate professionally and positively and work cooperatively with patients, families, and other employees at all levels.
Proficient with computer skills and Microsoft Office applications.
Must be capable of maintaining regular attendance.
