Why this job matters
The Spirit Production Manager is responsible for managing and overseeing every aspect of production from delivery of raw materials to transfer of finished goods to the receiving internal department. They, as subject matter expert, will play a central role in product development and innovation while ensuring that the quality and integrity of the established product line is maintained. The Spirit Production Manager will also oversee the Ko-Kwel Spirits Cask Club program, ensuring timely barrel fills, tastings, and bottling orders are fulfilled to exceed member expectations while coordinating with marketing and player development to support membership growth. In this dual role, the Spirit Production Manager is expected to set and maintain the highest standards of ethics, safety, compliance, and operational excellence. An ideal candidate displays strong communication and interpersonal skills and has, or can quickly gain, in-depth knowledge of each component of spirits production operations, while also embodying the entrepreneurial ethos of this expansive opportunity.
What you bring to the table

- Coordinate and oversee all aspects of the Ko-Kwel spirits production process.
- Maintain a high-performance culture and professional work environment.
- Have - or quickly develop - knowledge of all recipes and spirit flavor profiles, required production processes, equipment use, and essential cleaning and sanitation steps to consistently maintain the required production quality.
- Coordinate the supply planning, movement, staging, organization and tracking of all material entering and exiting the production building.
- Maintain ongoing forecasting, inventory management, TTB reporting support and record keeping of all production operations with the adopted production system of record.
- Jump in where needed to support the team and keep things running smoothly. (Other duties as assigned)
Production Process :
Develop all production operation schedules including barrel aging, blending and bottling in an efficient manner that optimizes quality within set cost allowances.Use and maintain all TTB approved proofing / gauging devices and instruments.In conjunction with the Ko-Kwel procurement department, forecast supply needs ongoing to ensure incoming materials arrive in time to support the production schedule.Lead the bottling and packaging process of each individual spirit, including the manual and digital steps to rinse, label, fill, cap / seal, and package cased product for distribution.Ensure all production processes are done in an efficient and safe manner, and all quality controls, recipes, and flavor profiles are met for each individual spirit.Cask Club & Casino Relations :
Hire, train, and manage the staff supporting the Cask Club, ensuring exceptional service, accurate fulfillment, and a consistent brand experience for Members.Fill all Cask Club 10 Liter Barrels with selected blended spirits on a timeline set to meet or exceed Member expectations, incorporating the sensory analysis training provided.Provide support for Cask Club Members barrel tastings and bottling orders at peak fulfilment times.Support marketing and player club efforts designed to drive positive revenue results in the new Ko-Kwel Spirits / HDC Tasting Room and Cask Club Membership Program.Host tours of the Ko-Kwel Spirits Production Building as requested by various internal departments to create interest with internal and external stakeholders.Provide ongoing training to restaurant and bar staff on all Ko-Kwel Spirits products, including tasting notes, production insights, and recommended service techniques, to ensure front-of-house teams are confident and knowledgeable brand ambassadors.Data Points & Compliance :
Enter all orders into the production system-of-record to ensure accurate data is available daily for record keeping and compliance requirements.Provide the required data internally to support the timely and accurate filing of all TTB reports.Operational Excellence :
Maintain a clean and organized work environment to ensure safe and efficient workflows for all scheduled production.Conduct daily safety and maintenance inspections, proactively communicating equipment maintenance needs to the appropriate internal department.Support the internal maintenance team by maintaining a current list of outside resources, onsite spare parts and tools for crucial equipment, and a scheduled routine of preventative maintenance practices.Prepare new and updated SOP's and templates for all production related processes, safety, and compliance requirements to ensure standardized steps and optimal outcomes.Oversee training of any production support staff to ensure all standards are met.What you're responsible for (and not)

You'll need to be available to work weekends, holidays, and evenings when we are busy. Must be able to stand and walk for extended periods on concrete flooring throughout an 8- to 10-hour shift. Regularly required to lift and carry up to 50 lbs., including materials, cases of bottles, and equipment components. Frequent bending, kneeling, reaching, climbing, and manual dexterity required for operating production equipment and handling packaging tasks. Work environment includes exposure to fluctuating temperatures, loud machinery, and occasional airborne particles such as grain dust or alcohol vapors. Must be able to safely operate forklifts, pallet jacks, and other material-handling equipment. Must wear appropriate personal protective equipment (PPE) and adhere to established safety protocols at all times. Work is performed primarily indoors in a distillery production setting, with occasional tours or outreach activities in other areas of the property. Reasonable accommodations will be made to enable individuals with disabilities to perform essential job functions. It's important to stay calm and make good decisions under pressure, especially when dealing with stressful situations or upset people. Just a heads-up-the casino environment may expose you to secondhand smoke.

At least 5 years of experience managing bottling production operations; distillery, brewery, or winery experience strongly preferred. A focus on product creation is a plus!Proven leadership in overseeing production teams, scheduling, and workflow management.Familiarity with bottling line equipment, maintenance coordination, and troubleshooting.Demonstrated ability to manage inventory, production records, and quality control processes Experience working in inventory and / or manufacturing software systems.Competence with all Microsoft Software applications (Outlook, Word, Excel & PowerPoint)Experience driving forklifts and electric / manual pallet jacks.Upon hiring, must obtain a current state alcohol pouring permit and food handler's card.Must be a minimum of 21 years of age.Hard working, independent multi-tasker that sets the highest professional example in daily duties for both internal projects and service of customers and clients.Must have ability to work independently and maintain a company-wide perspective in relation to department focused operations.Adhere to all safety policies set forth by Ko-Kwel Casino Resort and applicable government regulatory agencies.Must pass and remain in compliance with background and drug free work place policies.Friendly and approachable attitude that helps guests (and the team) feel welcome and cared for every day.Comfortable communicating clearly and positively with both guests and teammates.Ko-Kwel Casino Resort is owned by the Coquille Indian Tribe.
