About the role : Fish Butchers will work to prepare high quality fish in our central kitchen . They competently and safely dice raw salmon and portion filets with maximum quality and shelf life, as well as minimal cost and waste .
Essential Duties & Responsibilities
Fish Preparation
- Prepare, dice, and portion raw salmon and filets.
- Assist in packaging , bagging and sealing, and quality assurance to maintain the highest quality and standards.
- Restock items that were depleted during the shift .
- Communicate with mixers to manage timing of orders , any guest feedback, etc.
- Update knowledge and skills by participating in staff training opportunities .
- Be a team player—support and assist your fellow team members whenever possible .
- Complete other duties as assigned by management .
Sanitation, Hygiene, and Safety
Maintain and strictly abide by state sanitation / health regulations and hotel requirements and procedures .Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely .Inspect the cleanliness and organization of the line and workstations; rectify any deficiencies .Inspect the cleanliness and working condition of all tools, equipment and supplies, ensuring everything complies with standards .Maintain proper storage procedures as specified by D epartment of Health requirements .Station Set Up
Set up workstation with required mise en place, tools, equipment and supplies according to standards .Work with other Fish Butchers and kitchen team to ensure that the kitchen is fully set up on time .Additional Skills and Responsibilities
Familiar ity with food handling and safety regulations .Exude excellence in hospitality .Passion for exceptional hospitality in food and beverage .Self-driven, results-oriented, and a passion for excellence .Experience / Education
Minimum 1 +yrs experience as Line Co ok or Prep cook in a restaurant or fast casual concept.Sushi bar or fish department experience highly preferred.Adept knife skills.NYC Food Protection Certificate (Food Handler’s) preferred.Proficient in kitchen ticket systems, order management and timing .Able to work nights, weekends and holidays, and variable schedule, per the needs of the business .Physical Demands and Work Environment
Ability to operate and use all equipment necessary to run the restaurant.Ability to move or handle equipment throughout the restaurant generally weighing 0-50 pounds.Ability to work varied hours / days as business dictates.Ability to stand and walk for up to 8-10 hours a day, including moving between multiple levels while utilizing stairs.Working in a cold room with a walk in jacketBenefits :
