Job Duties and Expectations :
Communication / Time managementMaintaining contact with co-workers and management on ordering, status of task work, organizationConnecting with management on scheduling needs or changesBriefing with direct management upon arrival and prior to departureUnderstanding daily needs and time management of prep, breaks, and shiftsDaily production of all day dessert menu items. Tasks handled according to priority and training. Including but not limited to :Chocolate moussePastry cream, praline cream, chantilly, etc.Rice PuddingNougatineCustards and anglaiseIce cream and sorbet bases and spinningCaramel and chocolate saucesPate a choux and baking paris brest / profiteroleCreation and Production of daily specialsAssisting Chefs with recipe R&DRotation and organization of dessert mise en place in coordination with garde manger cooks, as well as pastry production itemsProper use of FIFO in organization of walk-in and freezer products and mise en placeCommunication with management on items or mise that are running low or nearing expirationTasting all products and finished desserts for proper seasoning and quality controlDaily cleaning and organization of pastry areaSweeping, mopping as needed and after each shiftOrganization of tools & smallwaresDetailing of tabletop mixers and large stand mixer after each useProper maintenance and handling of all kitchen equipment and smallwaresCleaning inside and outside of low boy refrigeratorsCleaning Rational Combination oven when production and / or time permitsWeekly TasksAssist BOH management in counting Pastry Department inventory items accuratelyComplete deep cleaning tasks assigned by BOH managementFLSA Status : Non-Exempt
