Kitchen Manager

Key Responsibilities :

The main objective would be to oversee operational duties of the shop. Prepping ingredients, portioning meats, and preparing sauces. Another key responsibility will be maintaining product quality to the standards that have been set.

• Ingredient Preparation : Efficiently prepare and portion house-made meats, vegetables, and other ingredients according to recipe standards and specifications.
• Sanitation and Hygiene : Maintain a high standard of cleanliness and sanitation in the prep area, adhering to food safety regulations and ensuring a safe working environment. Must know DOH requirements and be able to maintain these throughout the store.
• Stock Management : Monitor ingredient levels, rotate stock, and inform the chef if supplies need to be reordered. FIFO needs to be implemented at all times.

Complete ordering / receiving and prep lists daily.

Pay :

Bonus : if prime costs are kept below 60% you will receive a $1k bonus quarterly. Additionally if EBITDA is 15% or above you will receive a 2.5% cash sweep of the net revenue.
