JOB SUMMARY :
TheOW Oven Operatoris responsible for effectively performing all the required duties of the position in an accurate, thorough, and safe manner.
Employees are responsible for producing a safe and quality food product per USDA guidelines and are required to report all food safety related problems to their Supervisor / Manager and / or to the Quality Assurance department to initiate immediate action.
DEPARTMENT : OLD WISCONSIN (SAUSAGE)
MAJOR DUTIES & RESPONSIBILITIES :
- Follow the HACCP program including developing a working knowledge of the Critical Control Points and Critical Limits as they pertain to the food safety of our product.
- Starts, stops, and regulates temperature of ovens.
- Push / pull racks in and out of the smokehouses, review processing schedules, operate smoke generators.
- Cleans related equipment, including ovens
- Inspects cooked product for obvious deficiencies during cooking process
- Measures or weighs racks of product during and / or after cook cycles.
- Takes responsibility of the work area to produce a safe and quality food product.
- Reports all food safety related problems to your supervisor, manager, or to the quality assurance department to initiate immediate action.
- Comply with safety regulations and maintain clean and orderly work areas.
- Other duties as assigned.
