JOB SUMMARY :
Dry age and cut meat to Peter Lugers / Partners specifications.
ESSENTIAL JOB FUNCTIONS :
- Unpack meat from cases, check size and quality.
- Place meat on to dry age racks and label accordingly.
- Properly store and rotate meat daily.
- Cut all meat, adhering to partners specifications.
- Receive deliveries, check invoices, and compare with orders received.
- Reports immediately all defects, lack of quality or shortage in meat ordered.
- Keeps production records and reports as required.
- Maintains the refrigerator in a clean and sanitary condition.
- Monitor and log temperatures of product and coolers.
- Ensures that all requisitions are accurately completed.
- Cut meat using a bandsaw.
- Use a meat grinder to grind trim.
- Clean, maintain, disassemble, reassemble bandsaw and meat grinder.
- Breakdown boxes and place in the appropriate area.
- Cleaning and cutting whole primal cuts of beef.
QUALIFICATIONS :
A Minimum of one year in meat cutting experience. Experience cutting meat on a bandsaw and using a meat grinder.
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS :
- Literate and fluent in English.
- Physical strength and stamina to constantly lift 80 lbs. on a regular basis.
- Ability to stand for 8 hours.
- Visual range must include immediate environment.
- Auditory range must include near and medium distances.
- Dexterity to use food preparation machinery, meat grinder and bandsaw.
