FUNCTION
The Cook is responsible for safely preparing food items, following menu specifications and standard recipes.
ORGANIZATIONAL LEVELS :
- Cook I- is the entry-level skilled trade job in this series
- Cook II- proficient in executing all stations on the line, cross-trained to ServSafe certified
- Cook III- proficient in prior levels plus cross-trained to outside Completed Leadership Training class.
SPECIFIC DUTIES AND RESPONSIBILITIES COMMON TO ALL LEVELS IN SERIES
- Ability to operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and
- Requires reading and math skill for recipes and
- Ability to read, write, speak and understand recipes and communicate with other Team
- Responsible for cleaning kitchen work areas and equipment as well as sweeping and mopping
- Actively participates with staff to cook, prepare, dish-up and assemble all menu
- Adheres to control procedure for food costs and
- To encourage and abide by all health codes and hand washing
- Prepares all food items according to standard recipes and menu to ensure consistency of product to the

STANDARDS OF PERFORMANCE
- Abilities demonstrated in handling the banquets and food outlet
- Be in constant communication with BOH Team
- Maintaining interpersonal working relationship among all
- Excellent Oral and written communication
- Ability to work in fast-paced
EDUCATION, TRAINING, AND EXPERIENCE
- High School Diploma or GED
- One-year minimum experience in food preparation and food knowledge is preferred.
- Ability to work both front and back line
- Must be able to complete any classes or certifications
- Ability to obtain a valid Racing License Racing
