The Brewery Operations Manager (BOM) will be responsible for the overall performance of the operation at all MTB Taproom locations.

This individual will report directly to Ownership. The BOM must be both creative, process and data-driven in their management style and share the drive for excellence in execution by creating a customer experience that is world-class in the brewing industry.

We want you to come on board with industry experience, bring new ideas, and create a structure without any of that corporate vibe nonsense that we all can’t stand.

Reporting Relationship : The BOM reports to the Head, Brand & Business Strategy and the Head of Brewing & Production Operations.

Org Structure : 1 direct report with 15 indirect reports.

Core Responsibilities

POS Development

Deep dive, create and maintain all categories in Toast POS to assure proper categorization of sales for scorecard developments and financial review.

Work with IT and Lead Design to create interfaces with inventory, online sales, email marketing, loyalty programs, and any other integrations to other programs within Toast POS and website.

Continually develop POS capabilities to enhance the customer experience and streamline operational activities.

Financial

Responsible for the overall financial performance for all taproom operations by developing accurate sales projections and plans (the how) to achieve said targets.

Work directly with ownership reviewing sales and costs within the company P&L to achieve department budgets and sales targets.

Business Analytics & Reporting

Develop and manage reporting scorecards / dashboards to report daily, weekly, monthly data around overall performance including sales, costs, comparison trends, inventory, and any non-financial metrics.

Be prepared to report and bridge to ownership.

Analyze trends and monitor budget vs. actuals. Develop and implement strategies to meet and exceed revenue targets while managing expenses responsibly.

Review data to deduce insights and draw a logical conclusion for which improvements are needed to grow sales and increase efficiency.

Innovation & Growth

Lead and partner with Bar Manager on new menu item development to encourage customer growth and revenue.

Lead and manage expansion projects. Identify opportunities and analyze feasibility in collaborations with internal stakeholders.

Inventory Management

Develop and maintain inventory processes to include tracking, product / ingredient lists for all bar menu items, which includes budget cost guidelines and maintenance of appropriate inventory levels.

Heavy focus and development around usage, par levels, variance, pour cost, inventory turnover and inventory turn days.

Coordination with the Brewery production employees to anticipate and maintain adequate on-site beer inventories and advanced promotion planning.

Partner with production (Head of Brewing & Production Operations) to develop a fluid inventory process that coincides within taprooms and distribution.

Operational Procedures

Develop, manage and maintain Operations Procedures for Systems, Processes and FOH responsibilities; updating these documents as necessary to maintain compliance with all applicable standards.

Develop, manage and maintain opening and closing procedures for all bartender and bar staff employees in partnership with the Bar Manager.

Development and maintenance of safety and sanitation standards in the while maintaining compliance with all applicable standards.

Maintain internal and external areas of all taprooms with the utmost cleanliness and sanitation.

Event Planning

Oversee and partner with the Head of Brand & Business Strategy (HBBS) and the Head of Brewing & Production Operations (HBPO) on advanced event planning to ensure proper coordination with other stakeholders of the business.

Develop a rolling three (3) month Strategic Plan for events and activities. This includes developing proposals and an implementation plan.

Present recommendations to the HBBS and HBPO for comments, feedback, and approval.

Evaluate events for success or pivot activities then provide Heads with a completed Post-Event Review document.

Employee Management

Partner with Bar Manager in staff selection, development / training, performance reviews and diversity, equity, and inclusiveness initiatives to create a positive work environment.

Partner with Bar Manager on shift scheduling for bar staff to ensure proper coverage to meet customer demands and align internal fairness across the bar teams.

Communicate and train all staff on upcoming business changes, new product releases, promotions, events, and customer service in advance to ensure consistency in execution.

Qualifications

A minimum of 7 years of Food & Beverage experience, at least 4 years of which have been in managing a Food & Beverage operation, preferably in a craft brewing or fast-paced cocktail environment.

Strong financial data acumen.

The ability to work alongside and lead a collaborative effort with a team.

The ability to accept - follow directions and take constructive criticism.

The ability to work effectively in a systems environment including Toast POS, Ekos, staffing systems, team management, and inventory.

The ability to create dashboards and scorecards with Tableau, Microsoft and Google suites with emphasis on Excel and Sheets i.

e., pivot tables, v-lookups, graphs.

Experience in inventory management and methodologies creating an inventory process from start to finish.

A positive and empathetic team-building approach to the daily interaction with employees, to foster a positive working environment.

A positive and trustworthy self-starter with the ability to prioritize duties among multiple, concurrent tasks.

The confidence and flexibility to work with a diverse group of management, brewery production staff and front-of house bartenders.

The knowledge and creativity to work with bar staff to develop and maintain a revolving menu of well-crafted offerings and events with an emphasis on quality and execution.

Significant familiarity with craft beer styles and the customer experience in a craft beer environment.

Significant familiarity with cocktail creation and innovation that surpasses industry trends.

Working knowledge of budgeting and cost controls, the ability to develop and understand P&L statements, inventory management, purchasing, and vendor relations.

Ability to multi-task and handle several competing initiatives simultaneously and meet deadlines with a sense of urgency.

STAR Certification

Good communication skills, ability to collaborate and prioritize
