Responsibilities include :
- Directing food preparation and service for all meal periods
- Recipe adherence and daily specials creation with an emphasis on Italian cuisine
- Training and supervising kitchen staff
- Compliance with food and facility safety / sanitary requirements
- Ensuring food quality and cost standards are consistently met
- Completing kitchen administrative and human resource duties
- Inventory, ordering, scheduling within cost control budget guidelines
- 5 years prior experience as Chef / Senior Sous Chef is required
- All Cost Controls relating to food production
- Extensive knowledge of Food Safety Programs / HACCP / and Health Department compliance.
Prior experience as Head Chef, Sous Chef, Executive Chef, Chef de Cuisine, Kitchen Director, BOH Director is critical to success at this job.
