Summary
Under the direction of the designated Sous Chef, the Cook II, prepares food items for guests (internal and external) utilizing an approved menu.
Maintains all food, equipment, and kitchen to established health codes and SCR standards. Assist with education and training of a Cook I, while maintaining a positive attitude and work environment.
In the absence of a Cook III or Sous Chef, the Cook II is responsible for the supervision of BOH kitchen staff. Pay for Cook II will be determined based on experience and outlet location.
Outlets in SCR are identified as follows; Fairway Café, Restaurant Row, Main Kitchen, Noodle Bar, and Canyons.
Duties / Responsibilities
- Ability to learn new tasks and follow basic verbal directions
- Ability to achieve basic knife skill competency as well as time management
- Maintain sanitation standards throughout the entire property
- Possess knowledge of basic food products (meat, poultry, fish, produce, dry goods, etc.)
- Prepare and maintain portion control to recipe standards
- Prepare BEO and special event orders in a timely manner
- Prepare product in a timely manner
- Arrive on time for each shift
- Maintain a positive attitude and safe work environment
- Label and date all food items at their designated station as well as the kitchen as a whole to ensure all food items are within expiration dates or, if not, dispose of and properly log
- Ability to read and prepare all food order tickets in a timely manner
- Keep work stations and inventory stocked and organized
- Perform special projects and other responsibilities, tasks, or duties as requested.
Supervisory Responsibilities
- Assist the Cook III in monitoring and training of new BOH team members to help them achieve professional development
- Assist the Cook III in monitoring and enforcing company and departmental safety, health department, and all other applicable policies
- Protect the assets of Soboba Casino Resort and preserve confidentiality and integrity when accessing team member information maintained in departmental files / systems
Education / Qualifications
- Must be 21 years of age, or older.
- High School Diploma or GED equivalent, preferred.
- Associates Degree in Culinary Arts, considered a plus but not required.
- Minimum three (3) to four (4) years of previous food preparation, or cook experience.
- Basic knowledge in following recipes and BEO’s
- Must effectively communicate both verbally and in writing
- Any combination of education, experience and training that provides the required knowledge, skills and abilities
- Must be able to provide evidence of eligibility to work in the United States of America
Certificates, licenses and registration
- Ability to obtain and maintain a valid Soboba Tribal Gaming Commission license
- Required to submit to and obtain negative results on all drug and / or alcohol testing
- Ability to obtain and maintain County of Riverside Food Handlers Card within seven (7) days of date of hire.
