Director of Food & Beverage - The Quoin Hotel & Restaurant
The Quoin Hotel, in downtown Wilmington, is home to three unique dining experiences. Explore flavors inspired
Italian cuisine at The Quoin Restaurant & Bar. Take in the view with craft cocktails at The Quoin Rooftop. Finally,
indulge in specialty drinks in a historic locale at Simmer Down.
We are currently searching for a passionate, hospitality-focused F&B Director to help lead our team across all F&B
outlets with the hotel. The strongest candidate will display innate leadership qualities and an ability to motivate and
retain a talented service team. As a team member they will display a strong work ethic and the ability to nurture
relationships with both our guests and team members. The F&B Director will work closely with Director of Operations to
ensure service standards remain expectational.
The F&B Director should have knowledge of the latest culinary and hospitality trends and be passionate about providing
exceptional hospitality. The F&B Director must have excellent communication and motivational skills, and a
collaborative, hands-on management style with the ability to think quickly when under pressure.
Responsibilities, include but are not limited to :
- Manage the daily operations of the restaurant, including front of house and back of house areas
- Provide exceptional customer service and ensure guests are satisfied with their experience
- Handle any issues and concerns that may arise from unsatisfied guests, and do so diligently and effectively
- Conduct administrative duties, such as payroll, inventory management, and financial reporting
- Ensure all food health and safety protocols are in place and are being followed by every team member
- Play an active role in the restaurant’s marketing campaign efforts and promote the brand within the local
community
- Provide education and training to new hires and current employees
- Conduct human resources tasks, such as recruiting and hiring, to fill restaurant staff positions
- Work with Method Co Directors to maintain Method Co brand standards
- Analyze restaurant sales and drive improvement in restaurant operations, execution, sales, and
profitability
Manage and coordinate the Restaurant Management team to support their restaurant performance &
execution performance
- Coach restaurant team members to drive sales, improve profitability and guest satisfaction
- Assist & participate in hotel operations, when needed
- Establish a rapport with groups to ensure guest satisfaction and repeat business.

Working Conditions / Environment
The person having this position may have to stand and / or walk, push, kneel, bend, balance, squat, reach and
stretch for eight to 10 (8 to 10) hours per day.
- Agility in executing fast-paced movements to navigate different areas of the property efficiently.
- The person having this responsibility may have to move, pull, carry, or lift objects weighing at least 50 pounds.
