PASTRY CHEF
Postcard Bakery is looking for a passionate and detailed Pastry Chef to oversee the daily production of all bakery goods and pastry operations.
The ideal candidate is a confident leader who enjoys nurturing a team and has a strong focus on quality in all aspects of the job.
Experience with gluten-free pastry is a plus, but not required.
Postcard is a gluten-free Japanese bakery specializing in bubble tea, fruit sandos, and more! Owned and operated by the same partners who run Nami Nori.

RESPONSIBILITIES
- Prepare a variety of baked goods, ensuring all product is up to standard
- Oversee and assist in production where necessary
- Create daily / weekly prep lists based on restaurant orders and delegate to the team
- Complete daily Quality Check of items being prepped to ensure Quality in all areas of production
- Create packing slips for deliveries to restaurants on delivery days. Print and distribute to necessary parties
- Oversee packing of all delivery orders to restaurants
- Oversee the packing of the delivery vehicle, the temperature log, and proper transportation of all items
- Inspect delivery of food to ensure product is of the highest level of quality; Does not receive sub par product
- Monitor proper storage of all goods received
- Confirm that all invoices received are accurate. Make edits and reach out about credits if needed.
- Ensure commissary order module items are up to date and accurate.
- Evaluate and manage all pastry team members and conduct performance coaching and counseling following progressive discipline protocols as needed
- Accountable for meeting commissary budgets including menu / product utilization and waste, labor forecasting, daily ordering, inventory maintenance and other operating expenses
- Implement & maintain systems and monitors production to ensure high food preparation quality control standards
- Work closely with the management team of Postcard
- Complete DOH Checklist every day
- Manage safety, sanitation, organization and cleanliness in the commissary kitchen
- Ensure all commissary staff are trained in food handling procedures and follow local health and sanitation guidelines
- Adjust, evaluate and develop responses to fluctuations in business demands and sales including quantity and quality of food purchased and prepared
- Complete a full and accurate inventory of all product and supplies at the end of each period
- Ensure proper equipment operation and maintenance
- Troubleshoot facilities issues in house and delegate to upper management and / or service providers as needed
- Adhere to all Standard Operating Procedures
- Complete all administrative responsibilities in a time frame defined by the Corporate Chef team
