Shade Hotel, Redondo Beach’s only 4-star luxury boutique hotel, is looking for an experienced, talented, and hospitable Sous Chef to join the Shade Family! The Sous Chef is responsible for working with the Executive Chef and other Sous Chefs to oversee the culinary team and for successfully executing breakfast, lunch and dinner at Sea Level restaurant, private events of all types and sizes (5-400), holiday / special event functions, room service, and pool service.

We are specifically looking for a Sous Chef who is an excellent leader AND has the desire and ability to execute great food for both dining room service and banquets.

We are looking for Sous Chef candidates that desire to grow and learn with our team and have respect for quality ingredients that we source from local farmers.

Ideal candidates will work cleanly, efficiently, have a strong sense of urgency, be able to multitask, be a champion of quality, set and maintain standards and make sure systems are followed.

THIS POSITION IS FOR YOU IF YOU

  • A minimum of 2 years as a kitchen lead, supervisor or Sous Chef in an upscale high volume restaurant
  • Good communication skills
  • Ability to take direction
  • Ability to work calmly and effectively under pressure
  • Must have problem solving abilities, be self-motivated and organized
  • Commitment to quality service, and food and beverage knowledge
  • Understanding and knowledge of safety, sanitation and food handling procedures
  • Must be a team player and possess the ability to handle situations effectively as they arise
  • Ability to stand for long periods of time
  • Ability to occasionally lift 25 lbs or more
  • Must have Open Availability be able to work on weekdays, weekends and holidays
  • Food Handlers Card
  • Knowledge of technique and passionate about creating the best dishes possible.
  • Have experience in fine dining is a plus
  • Have experience in catering and banquets is a plus
  • Have experience in high volume is a plus
  • Have strong leadership skills
  • Bilingual (English and Spanish) is a big plus!

Duties :

  • Leadership and training of cooks
  • Work closely with the Executive Chef and FOH to lead and motivate the staff.
  • Liaise with the front of the house and hotel staff, ensuring a positive guest experience.

  • Ordering, including quality control
  • Inventory
  • Controlling labor and food cost
