Job Description and Duties

Limited Term 12 months; may be extended up to 24 months or become permanent.

Under the direction of the Food Administrator I / II, Correctional Facility (CF) or the supervision of the Supervising Correctional Cook, DOC, the Correctional Supervising Cook, CF, supervises and trains staff and inmate-workers responsible for preparing meals for patients in a correctional health care facility and oversees the preparation and dispensing of therapeutic diets per physician orders.

Ensures staff and inmate-workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual.

The Correctional Supervising Cook, CF supervises the cleaning and sanitation of the kitchen facility and equipment. Maintains order and supervises the conduct of inmates and protects and maintains the safety of persons and property.

Minimum Qualifications

Either I

Experience : One year of experience in the California state service performing the duties of a Cook Specialist II (Correctional Facility) or a Cook Specialist II.

Or II

Experience : Two years of experience in a supervisory capacity over cooks and other food service workers with responsibility for supervising and assisting with the preparation, cooking, and serving of various food items. and

Education : Equivalent to completion of the twelfth grade.

Official transcripts may be required upon appointment. If it is determined an applicant does not meet the Minimum Qualifications, the candidate will be withheld from the eligibility list, rendering them inactive and ineligible to be hired for the position.

Candidates who have been withheld may file an appeal with the State Personnel Board.

Candidates new to CDCR or the Division of Juvenile Justice are required to submit to a background investigation process utilizing Live Scan Fingerprinting, and Tuberculosis testing prior to appointment followed by department annual Tuberculosis testing / evaluation thereafter.
