$66,900.00 - $100,400.00

The actual salary offer will take into account a wide range of factors, including location.

THE JOB :

The Executive Sous Chef assists the Restaurant Executive Chef in providing leadership and direction for the kitchen team, including the Assistant Chef, in alignment with the MGM brand.

This role involves guiding the team to meet operational and financial goals, overseeing recipe and inventory management, and handling staff performance, scheduling, and training.

The Executive Sous Chef also executes initiatives from property F&B leadership, maintains facilities to MGM Resorts standards, and ensures high customer satisfaction and an exceptional guest experience, all while adhering to company policies and procedures.

THE DAY-TO-DAY :

  • Oversee kitchen operations, including fiscal budgets, labor productivity, scheduling, inventory control, and adherence to guest service standards to drive profitability and execute menu strategies.
  • Ensure compliance with policies, operating procedures, training programs, and health standards, while executing F&B and company-wide initiatives.

Maintain high standards of sanitation and ensure staff completes all compliance training.

  • Support the Executive Chef in fostering a positive work environment, providing performance feedback, recognizing staff, and managing hiring and training processes in line with company diversity and compliance commitments.
  • Engage with guests to ensure satisfaction, address complaints promptly, and collaborate with the service team for a seamless dining experience.
  • Stay informed about the venue's food and beverage products, menu items, and kitchen equipment, and perform other job-related duties as needed.

THE IDEAL CANDIDATE :

  • Bachelor's degree or equivalent experience with 2+ years in a relevant role, including managing employees under a collective bargaining agreement and experience in high-volume or luxury fine-dining restaurants
  • Fluent in English, either as a primary or secondary language
  • Comprehensive understanding of health and safety regulations, with strong knowledge of menu preparation, presentation, and kitchen equipment
  • Proven ability to lead and mentor a team, execute staffing guidelines to optimize efficiency and labor costs, and maintain excellent organizational skills under time constraints and deadlines
  • Exceptional interpersonal and customer service skills, capable of working effectively with guests, management, employees, and outside contacts in a fast-paced, high-pressure environment
