Executive Chef
Blue Ribbon Sushi Bar and Grill is seeking a hard-working, team oriented and career driven Executive Chef whose passion for the craft of excellent cooking matches their passion for fine food and drink.
Must have Japanese experience.
Our ideal Executive Chef is driven by his passion for great food and hard work. They are a person that finds reward in inspiring their team to go the extra mile, maintain our amazing presentation standards and delicious recipes, while maintaining controls and food cost in a consistently healthy and clean environment.
Japanese food experience a plus and would oversee our two locations at The Grove and Palisades Village.
Skills & Requirements :
- Must have 3+ years of kitchen management experience in a full service, moderate to high volume restaurant ( Culinary Degree or Certificate in Culinary Arts is a plus).
- Proficiency in all line positions .
- Supervise day-to-day activities of the Sous Chefs and all other culinary personnel to achieve compliance in food preparations, presentation, and quality.
- Experience with inventory and food cost management.
- Ability to lead a team and maintain high morale . Strong leadership abilities are required to head up a diverse work group.
- Has a high level of professionalism. A positive attitude is the best asset.
- Ensure that all kitchen equipment, including but not limited to sinks, stoves, grills, hoods, coolers, freezers, etc., are in proper operating condition and are cleaned on a regular basis in accordance with sanitation and health department requirements.
- Must possess hearing, visual and sensory abilities to observe and detect emergency situations; also, to distinguish product, taste, texture, temperature, presentation and preparation.
- Excellent organizational, written, and verbal communication skills. Ability to speak and understand Spanish is a plus.
- Adhere to federal, state, and local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
- Must have open availability to work on different shifts, day / night, weekends, and holidays.
