- Administrar y operar con competencia asadores y ahumadores durante los turnos nocturnos, asegurando que las carnes se ahúmen, cocinen y preparen de acuerdo con las recetas establecidas y los estándares de calidad.
- Mantenga la temperatura y los niveles de humo precisos dentro del hoyo o ahumador, ajustando la configuración según sea necesario durante la noche para lograr el sabor, la textura y la consistencia óptimos de las carnes a la barbacoa.
- Cumplir estrictamente con los protocolos de seguridad e higiene de los alimentos, garantizando la manipulación, el almacenamiento y la preparación seguros de las carnes durante los turnos nocturnos, y manteniendo un área de trabajo limpia y organizada para mantener los estándares de salud y seguridad.
- Comunicarse de manera efectiva con otros miembros del equipo y el equipo de administración para coordinar el momento y la preparación de las carnes a la barbacoa para el servicio del día siguiente, asegurando una transición perfecta entre los turnos de día y de noche y contribuyendo a un flujo de trabajo fluido.
- Supervisar y mantener la calidad de las carnes a la barbacoa preparadas durante la noche, realizar controles periódicos para garantizar que cumplan con los estándares del restaurante y ayudar a gestionar los niveles de inventario para prepararse para el día siguiente.
- Capacidad para completar las tareas solicitadas por el equipo directivo.
