Mercy Me is an exceptional restaurant, bar, and lounge located in the elegant lobby of the

Yours Truly Hotel. Our menu celebrates South American cuisine by respecting traditional

cooking methods with the influences of historical migrations and modern culinary trends. We

are actively seeking enthusiastic and experienced individuals to join our friendly food and

beverage team. At Mercy Me, we believe in teamwork across all departments, including Culinary and Hospitality, to achieve our main goal : providing genuine hospitality and ensuring our guests

are always satisfied. As a team member, you will regularly interact with colleagues from both

departments, requiring effective and respectful communication with your coworkers and

managers. This role allows for you to be focused on creating cuisine inspired from cultures all

around South America.

Job Description

The Cook role is focused on being fully present and engaged in an environment that is fast

paced. Requiring a large amount of sharp mental acuity and focus on attention to detail. Challenging but extremely rewarding in the potential growth offered.

The focus is on performing and perfecting the craft of being a chef and cook. We focus on learning the skills that help our staff grow and develop internally and externally.

Compensation

Competitive; Anticipated compensation for a Sous Chef position comprises a Salary, depending on experience, for employees who work the scheduled shifts to get the job done.

Sous Chef

ACCOUNTABLE TO :

Executive Chef, General Manager

EXPECTATIONS

Be a role model for cleanliness, organization and work ethic for all staff.

Uphold the highest standards of food production to ensure a safe and quality product for the

guest.

ROLE RESPONSIBILITES AND DUTIES

Maintain cleanliness of back of house (BOH)

Set up a weekly and monthly cleaning schedule utilizing all staff of BOH

Assign deep cleaning tasks to cooks that are scheduled during carpet cleaning and / or hood

cleaning nights

Utilize a check out system for all of the cooks, checking not only stock but also cleanliness of

kitchen

Contribute to the creative process of the restaurant. Creating menu item, streamlining details

and focus on training the staff

Supervise BOH

Perform evaluations of cooks. Compensation will be up to General Manager.

Train and supervise the training of all new cooks

Make sure rotation procedures are being followed and overstocking is not occurring

Create a waste sheet

Be aware of portioning

Maintain all thermometers in freezers and coolers (make sure they are present and working)

Check all temperatures of cold and hot products to make sure they are correct

Count inventory and calculate food cost

Complete product ordering

QUALIFICATIONS

4 years or more of foodservice experience

High School Diploma

UNIFORM CODE

The expectation of Mercy Me DC to it’s approach to food is that presentation is key. We respect the nature of our food and beverages and will do our utmost to present them beautifully to our patrons.

As staff, we will show the same respect to ourselves and ensure our personal presentation is as excellent as our food and drink.

Uniform requirements and uniform stipend explained upon hire.
