Description
- Estimate drink consumption, place orders with suppliers, and schedule delivery of fresh food and beverages.
- Resolve customer complaints about food and beverage quality or service.
- Monitor actions of staff and customers to ensure that health and safety standards and liquor regulations are obeyed.
- Maintain budget and prepare payroll, and internal records.
- May use computer software to monitor inventory, track staff schedules and pay, and perform other record keeping tasks.
- Good working knowledge of point of sale system with ability to update menu
- Check quality of deliveries of wine, beer, liquor and fresh food and baked goods.
- Meet with sales representatives to order supplies such as tableware, cooking utensils, and cleaning items.
- Arrange for maintenance and repair of equipment and other services.
- Total receipts and balance against sales, deposit receipts, and lock facility at end of day.
- Select or create successful menu items based on many considerations, and assign prices based on cost analysis.
- Recruit, hire, and oversee training for staff.
- Schedule work hours for servers and kitchen staff.
- Monitor food preparation and methods.
- Communicate with customers, sales reps, and suppliers.
- Oversee the food preparation, checking the quality and size of the servings.
- Post and keep records of health inspection reports.
- Change menu items. Create new ones. Consider new items that have been popular in the past.
- Analyze recipes to decide costs for food, beverage and assign menu prices.
- Managers are often responsible for recruiting and hiring new staff.
- Orient staff and oversee their training.
- Schedule staff work hours, making sure that peak dining hours are covered
- Follow all company and safety and security policies and procedures
- Report maintenance needs, accidents, injuries, and unsafe work conditions to manager
- Complete safety training and certifications
- Ensure uniform and personal appearance is clean and professional

- Helps cover Banquet functions as needed.
- Ensures all Food and Beverage areas are covered and maintained including but not limited to : Restaurant and bar, banquets, pool area, room service and the coffee shop.
QUALIFICATIONS AND REQUIREMENTS :
Minimum : Basic reading, writing, and math skills. Hotel experience and ability to speak English preferred.
This job requires ability to perform the following :
- Carrying or lifting items weighing up to 50 pounds and pushing and or pulling approximately 200 pounds
- Frequently standing up and moving about the facility
- Frequently handling objects and equipment to maintain the facility
- Frequently bending, stooping, and kneeling.
Other :
- Communication skills are utilized a significant amount of time when interacting with guests and employees.
- Basic reading, writing, and math abilities are needed when reading recipes, menus, banquet event orders, assignments, and completing checklists.
- May be required to work nights, weekends, and / or holidays.
