POSITION OBJECTIVE
The Catering Sales Manager is a highly motivated professional responsible for booking both new and existing social and corporate catering business. This role is focused on achieving and exceeding food & beverage and group room revenue goals through proactive efforts including telephone solicitation, outside sales calls, site inspections, and written communication. The ideal candidate will also drive the future growth of catering sales within a designated territory or market segment.
ESSENTIAL JOB FUNCTIONS
- Develop and execute action plans to achieve and exceed sales revenue goals by targeting new and existing accounts.
- Prospect new business using marketing and sales resources; qualify incoming leads and generate proposals, contracts, and addenda as needed.
- Negotiate guest room rates, meeting room rental, function space, and hotel services within approved guidelines.
- Follow up on outstanding proposals to effectively close business, process definite contracts and route information appropriately to the operations team.
- Maintain accurate and organized files in iVvy and other sales platforms, including activities, attachments, and communication records.
- Manage account details to ensure all aspects of solicitation, booking, and closing are documented and executed.
- Conduct property tours and site inspections; host clients and planners on pre-planning trips and program execution as appropriate.
- Complete and distribute required documentation such as site forms, BEOs, catering resumes, and group updates in a timely manner.
- Collaborate with the Director of Event Operations / Sales to complete business evaluations and maximize food & beverage revenues.
- Maintain strong client relationships and ensure successful event execution, including the communication of group specifications and program details.
- Monitor and manage room blocks and program deadlines; coordinate with group reservations agents and release unused space to maximize revenue.
- Forecast group rooms and group food & beverage revenue within a 5% variance on a 90-day rolling basis.
- Verify billing and credit information post-turnover and update as needed through departure.
- Analyze market trends, competition, and customer needs to drive strategic decisions and achieve performance goals.
- Utilize required systems and platforms to assess availability, profitability, and group progression from proposal to execution.
- Maximize resort revenue by selling all hotel offerings, including guest rooms, spa, golf, and food & beverage outlets.
- Stay informed of the hotel's surroundings, including local history, culture, and attractions.
- Participate in all sales and operational meetings, as well as client pre / post-conference meetings and resort-wide special projects.
- Represent the resort professionally in the community, industry events, and professional associations to build visibility and market share.
- Introduce and recommend preferred vendors aligned with resort revenue goals.
- Maintain open and effective communication with all operating departments to ensure seamless execution.
- Travel as needed for sales calls, client events, and trade shows.
- Demonstrate a commitment to Salamander Collection’s core values and perform other duties as assigned to support business needs.
EDUCATION / EXPERIENCE
High school diploma or general education degree (GED) required ; Bachelor’s degree preferred .Two years of catering sales experience required.REQUIREMENTS
Must be able to speak, read, write, and understand the primary language used in the workplace.Requires good communication skills, both verbal and written.Ability to identify and develop accountsExtensive knowledge of meeting room capacities, banquet set-up, audio-visual, and any other pertinent details as they relate to salesKnowledge of hotel and competitive market.Must possess computer skills, including, but not limited to, accounting programs, Microsoft Office, Excel and iVvy.Excellent interpersonal and sales-related skills.Exceptional organizational and time management skills.May be required to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form; to deal with problems involving several concrete variables in standardized situations.PHYSICAL DEMANDS
Most work tasks are performed indoors. Temperature is moderate and controlled by hotel environmental systems.Must be able to sit at a desk for up to 5 hours per day. Walking and standing are required the rest of the working day. This includes traveling to and from meetings. Length of time of these tasks may vary from day to day and task to task.Must be able to exert well-paced ability to maneuver between functions occurring simultaneously.Must be able to exert well-paced ability to reach other departments of the hotel on a timely basis.Must be able to lift up to 15 lbs. occasionally.Requires grasping, writing, standing, sitting, walking, repetitive motions, listening and hearing ability and visual acuity.Talking and hearing occur continuously in the process of communicating with guests, supervisors, and other employees.Vision occurs continuously with the most common visual functions being those of near vision and depth perception.Must have finger dexterity to be able to operate office equipment such as computers, printers, multi-line touch tone phone, FAX machines, photocopiers, and other office equipment as needed.WORK ENVIRONMENT
