FARMS (Front of House Apprenticeship through Research and Service) is a six-month paid front-of-house apprenticeship at Blue Hill at Stone Barns. Designed for individuals interested in the intersection of restaurant service, regenerative agriculture, and culinary research, FARMS offers hands-on training in hospitality alongside immersive food systems education.
Apprentices rotate through various front-of-house roles, learning the fundamentals of restaurant operations while participating in weekly readings and discussions, guest lectures, and independent research alongside a cohort of peers. The curriculum explores themes such as seed breeding, whole grain baking, grass-fed animal processing, and fermentation—linking the farm, kitchen, and dining room to agroecology.
FARMS is an opportunity to deepen your knowledge of food systems while developing the skills needed to thrive in a collaborative, mission-driven service environment. The cohort is strengthened by the diversity of its perspectives; experience outside of the food industry and farming is welcome.

Tasks May Include :
Rotating through dining room roles beginning with polisher and moving on to back waiter, runner, and front waiterGreeting guests, pouring water, polishing glassware, running food, and clearing platesMaintaining organization and cleanliness of plateware, glassware, and service areasSupporting beverage service and storytelling about our food, farm, and missionParticipating in educational programming, including readings, discussions, and work on the farmAssisting with research projects and hands-on activities like foraging or bakingThe Details :
