Captain’s Cod Company is a new and innovative Fish & Chips food truck. We are looking for an ambitious and qualified Food Truck Manager.

To be successful in this position you must have strong time management skills, passion for hospitality, and enjoys cooking & serving quality meals.

Responsibilities :

• Checking truck inventory each morning.
• Stocking of truck with any remaining items needed for daily service prior to departing commissary kitchen.
• Driving the truck to and from daily locations for serving.
• Responsible for fueling truck / generator each morning.
• Responsible for filling propane daily each morning.
• Able to work 12-14 hours each day, which also includes travel time.
• Responsible for operating the fryers to ensure fish and fries are cooked properly.
• Oversee food quality, including temping all fish while cooking.
• Responsible for employee safety on job site.
• Able to troubleshoot and problem solve as issues arise.
• Filling in as window attendant and operating POS system as needed.
• Maintain a clean and orderly truck kitchen, sanitizing surfaces, taking out trash etc.
• Monitor food temperatures to comply with health department standards.
• Ensuring all food items are properly stored and easily accessible.
• Restock items as needed throughout the shift
• Comply with nutrition and sanitation guidelines.
• Cleaning duties : general wipe down of counters at the end of daily service.

Requirements :

• Valid State Drivers License.
• Clean driving record, no accidents within the last 5 years.
• Reliable personal transportation.
• Proven experience as a kitchen manager or shift leader
• Basic math skills
• Ability to remain flexible, as duties may change based on food truck needs.
• Knowledge of health and safety rules in the kitchen.
• Manuel dexterity.
• A team player, positive attitude and someone with good communication skills.
• Patient with the ability to stay positive under pressure.
• Very good physical condition and endurance.
• Ability to stand for long periods of time throughout work shift.
• Ability to lift 30+ lbs throughout your work shift.
• Flexibility to work shifts, weekends, nights and holidays.
• High school diploma or equivalent is desirable; Training from a culinary school will be an asset.
• WA State Food Handlers Card
• Mechanical knowledge is a plus for troubleshooting issues on the truck when on site.

Work Schedule : Serving days are Tuesday to Saturday, from 11am to 7pm. Managers will start the day around 8am depending on serving location.

This is a food truck, shifts at times can be very long, and flexibility is key in this position. Working days are between 12-14 hours depending on locations and / or events.

This position is a part time position to start, with the opportunity to work as food truck server on other days when not scheduled as manager.

Pay : DOE + Tips (Willing to train for the right candidate)

Job Location : Remote / Traveling. Starting and ending each day in Cashmere, WA.
