JOB OVERVIEW
The Lead Production Cook is responsible for executing daily and weekly recipe production in their respective Milk Bar commissary.
They will utilize baking skills and previous pastry experience to prepare recipe components, assemble products and perform all necessary procedures related to production in the commissary.
The Lead Production Assistant upholds operational efficiency as well assists in supervision and development of staff.
JOB RESPONSIBILITIES
- Communicate proactively with the Production Manager throughout all shifts. Ability to ask for help and work as part of a larger team.
- Assist Production managers in daily communication and delegation of tasks to the production team
- Follow and comply with all established procedures, recipes and guides, including but not limited to assembly, equipment SOPs, weights and measures, health and sanitation, and general safe work practices.
- Meet production volume and production schedule while maintaining stringent adherence to quality standards for all Milk Bar products.
- Troubleshoot product issues from a flavor and quality standpoint. Understand and conduct shelf life testing, as needed.
- Monitor product quality assurance through regular tastings, both individual components and finished goods
- Compliance and adherence to all appropriate health and safety regulations and cleanliness requirements, including food safety and department organization.
- Maintain a sanitary and organized work environment in compliance with all DOH / Milk Bar standards
- Track product and assembly information in daily batch log. Monitor proper storage, FIFO, and shelf life guidelines for all products.
- Complete knowledge of all processes in the production area with an ability to train current and new staff
- Knowledge and skill with a variety of kitchen tools and equipment, including but not limited to 140 quart mixers, combi ovens, burr mixer, robot coupe etc.
- Able to monitor baking processes and identify issues and / or adjustments to adhere with Milk Bar quality standards. Regularly audit product quality and freshness, address and troubleshoot issues as they arise.
- Work with a sense of urgency and purpose to achieve daily, weekly and long-term goals.
- Other duties as assigned by the Production Manager in accordance with the needs of the business (like closing / opening duties, emails, setting the team up, food orders, etc.)
- Attend and participate in manager meetings with solution-based thinking
- Assist in the training process of onboarding production cooks
- Assist Production Managers in daily communication with front of house and between back of house teams
- Have a flexible schedule and be able to work on either AM or PM shifts
- Assist Production Managers in gathering daily / weekly / end of month inventory counts
- Uphold Milk Bar standards for excellent customer service. Be friendly and courteous in all guest interactions. Maintain excellent customer service while leading and participating in customer facing culinary activations.

SKILLS AND REQUIREMENTS
- Minimum 2 year experience in baking and / or related pastry production
- Understanding of proper pastry methods, techniques, and standards
- Food protection certificate required. Culinary degree preferred
- Be passionate about the food industry with a strong interest in high quality products
- Efficient time management skills with an attention to detail
- Ability to lift up to 25 lbs. frequently and 50 / 75 lbs. occasionally
- Open schedule a must; FULL TIME availability is a must
- Ability to build relationships and embrace change
