YOUR ROLE AS A RAW STATION COOK MEAT & FISH : Bellini is seeking an experienced Raw Station Cook to expertly prepare and serve raw meat and fish dishes, including crudo and carpaccio.
The ideal candidate will have advanced knife skills, a deep understanding of raw food preparation, and a passion for presenting fresh, high-quality ingredients.
You will be responsible for maintaining the raw station, ensuring that all ingredients are handled with care and precision while adhering to food safety standards.
RESPONSIBILITIES Prepare raw meat and fish dishes, such as crudo, carpaccio, tartare, and sashimi, ensuring precise cuts and portioning.
Utilize advanced knife skills to prepare and present raw ingredients with exceptional attention to detail and consistency.
Handle, store, and prepare raw proteins (meat and fish) safely, following all health and sanitation guidelines. Collaborate with the Head Chef and culinary team to develop and execute seasonal menu items for the raw station.
Maintain the cleanliness, organization, and efficiency of the raw station, ensuring readiness for service. Conduct daily quality checks of meat and fish ingredients to ensure freshness and optimal flavor.
Ensure accurate portion control to minimize waste and optimize food costs. Uphold high standards of food safety and sanitation throughout the preparation and service process.
Assist with other kitchen duties as needed during high-volume service periods. Completes assigned opening, closing and ongoing duties.
Practices sanitary and safe food handling by properly following health department regulations and maintaining current state certified Food Handler status.
Maintains and ensures compliance of all policies and procedures. REQUIREMENTS AND SKILLS Strong understanding of raw food preparation techniques, including crudo, carpaccio, tartare, and sashimi.
Ability to work in a team environment Ability to verbally communicate and take direction Ability to follow standard recipes Ability to read and have knowledge of weights and measurements Strong attention to detail High energy level and self-motivated Strong organizational and time management skills required Must be able to stand and exert well-paced mobility for up to 8 hours in length.
Must be able to lift trays weighing up to 25 lbs. on a regular and continuing basis. Must be able to bend, stoop, squat and stretch to fulfill tasks.
Must be able to exert well-paced ability in limited space and to reach other locations of the property on a timely basis Finger / hand dexterity to operate kitchen machinery, knives, etc.
Exceptional knife skills and experience handling various cuts of meat and fish. Thorough knowledge of food safety standards and best practices for raw food handling.
Ability to work efficiently under pressure in a fast-paced environment. Flexibility to work evenings, weekends, and holidays.
Ability to withstand changes in temperature, occasional smoke, steam, and heat and work in a confined area Must possess hearing, visual, and sensory abilities to observe and detect emergency situations;
also to distinguish product taste, texture, temperature, presentation, and preparation Experience with sourcing high-quality, sustainable meat and fish.
Familiarity with Italian or seafood cuisine. Education : Culinary degree or equivalent training. Experience Required : Minimum 2-3 years of experience working with raw meat and fish in a fine-dining or seafood-focused restaurant Licenses or Certificates : Ability to obtain and / or maintain any government-required licenses, certificates or permits.
