We offer a refined dining experience that combines traditional Italian flavors with contemporary flair. We're currently seeking an experienced and talented chef de cuisine to uphold our culinary reputation and delight our guests with the flavors of Italy.
Responsibilities :
Culinary Leadership :
- Oversee all kitchen operations, ensuring the highest quality standards in preparation, cooking, and presentation of dishes.
- Foster a culture of culinary excellence, inspiring and mentoring the kitchen staff to consistently deliver exceptional results.
- Collaborate with the Executive Chef and management team to develop innovative menus that align with our vision.
- Maintain a deep understanding of the local culinary scene, staying informed about trends, seasonal ingredients, and unique flavor combinations.
Menu Development and Cost Control :
- Work closely with the Executive Chef to create and refine menus that reflect our commitment to elevating the dining experience.
- Conduct regular menu costing and analysis to ensure profitability while maintaining the highest quality standards.
- Collaborate with local farmers, suppliers, and artisans to source the freshest and finest ingredients.
- Implement portion control and efficient production methods to minimize waste and control food costs.
Kitchen Operations :
- Lead by example in food preparation, cooking techniques, and plating.
- Manage nightly dinner service from the line or expo station.
- Coordinate with the kitchen staff to ensure smooth service during busy periods.
- Monitor inventory levels, anticipate kitchen needs, and ensure proper storage and utilization of ingredients.
- Uphold rigorous standards of cleanliness, sanitation, and food safety.
Staff Development and Training :
- Provide ongoing training and guidance to the kitchen staff, cultivating a culture of continuous learning, skill development, and teamwork.
- Foster a positive work environment that encourages open communication, creativity, and collaboration.
- Recognize and reward individual and team achievements, while addressing any performance issues in a constructive manner.
- Stay informed about industry trends, culinary techniques, and emerging ingredients, sharing knowledge with the team and encouraging experimentation.
Requirements :
- Proven experience as a Chef de Cuisine or similar leadership role in a high-end, fine dining establishment.
- Demonstrated expertise in culinary techniques, flavor profiles, and menu development.
- Strong leadership and communication skills.
- Exceptional organizational and time management abilities.
- Thorough understanding of food safety and sanitation practices.
- Availability to work evenings, weekends, and holidays as required.
Job Qualifications :
- A minimum of 10 years of culinary experience, with at least 5 years in a leadership role, preferably across multiple restaurant concepts.
- Proven ability to lead, train, and inspire a team.
- Excellent understanding of various cooking methods, ingredients, equipment, and procedures.
- Proficiency in menu creation and a strong understanding of food cost and restaurant economics.
- Ability to work well under pressure and manage multiple tasks simultaneously.
- Exceptional communication and leadership skills.
- Culinary Arts Degree or related field preferred.
- Must have a current ServSafe Manager Certification.
