Chef Enzo Febbraro grew up in his grandmother’s kitchen in Naples and has cooked all over the world, from Paris to Nice, Munich, Madrid, Milan and London.
Now more than a quarter-million guests come to Allegro each year to get a taste of his classics, such as lasagna Napoletana, lobster fra diavola with garganelli pasta and shrimp and creamy signature burrata.
Positioned at the hub of Wynn action, steps from the Wynn and Encore show theaters and close to Wynn Plaza Shops, Allegro is a landmark.
The Manager is responsible for operating the outlet efficiently within pre-established cost controls, managing, scheduling and training restaurant staff, monitoring staff performance, maintaining the department in accordance with Health Department standards, and ensuring customer satisfaction through application of outlet and Wynn Las Vegas service standards.
Qualifications
- Requires prior experience in food & beverage cost control and a minimum of two (2) years in a management position in a fine-dining, luxury setting.
- Service knowledge of wines, including vintages, regions, and food pairings
- Working knowledge in all restaurant computer systems.
- Excellent management, delegation, and presentation skills.
- Strong influence, interpersonal, leadership, managerial, communication, problem-solving, and creative solutions skills.
- Candidates must be able to communicate, read and write in the English language fluently and in a professional manner. Ability to communicate in a second language is preferred but not required.
- Applicants must be 21 years of age or above. Must be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all times.
- Ability to work the overnight shift - shift start time is between 5 : 00p - 8 : 00p until close.
