BASIC FUNCTION (the primary purpose of this position) :
Keep the kitchen premises in a clean and orderly condition, by performing the following duties.
PRINCIPAL ACTIVITIES & RESPONSIBILITIES :
- Promote a clean, safe, healthy and friendly work environment for employees and guests; report and direct safety issues to Executive Steward.
- Keeping all food and beverage areas clean.
- Proper operation of the dishwasher in the main kitchen.
- Sanitary scraping and cleaning of all flatware, glasses, dishes, pots and pans.
- Sanitary storage of all flatware, glasses, dishes, pots and pans.
- Transporting soiled dishes and flatware from the various wait stations and serving areas in The Mill Resort and Casino to the dish staging area for cleaning.
- Restocking all wait stations with clean flatware, glassware and dishes.
- Sweeping and mopping all areas of the kitchen floor. (including washing of floor mats)
- Using a variety of cleaning compounds and chemicals in the kitchen area.
- Detailed cleaning projects clearly defined by the kitchen tech cleaning lists or that have been assigned specifically.
- Removal of all trash, recyclables, cardboard, and soiled linens from all areas of the kitchen.
- Cleaning and changing of the fryer system on a set schedule.
- Other duties as assigned.
POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience) :
- Two (2) years related previous experience preferred.
- Must retain a current Food Handlers Card
- Ability to read and comprehend simple instructions, short correspondence, and memos.
- Ability to write simple correspondence.
- Ability to effectively present information in one-on-one situations to other employees of the organization.
- Ability to deal with standardized situations with only occasional or no variables.
- Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies.
PHYSICAL DEMANDS / WORK ENVIRONMENT ( the physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this position.

Ability to work weekends, holidays and evening hours as business demands. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to;
finger, handle, or feel objects, tools, or controls. The employee must regularly lift and / or move up to 10 pounds, frequently lift and / or move up to 25 pounds, and occasionally lift and / or move up to 50 pounds.
Occasionally sit. Ability to manage stress appropriately, make decisions under pressure, manage anger, fear, hostility and violence of others appropriately.
The casino work environment may expose you to second hand smoke on a regular basis.
