Director of Food & Beverage
Luxury, Full-Service Hotel Baltimore, MD
We are seeking an experienced leader to manage and supervise all aspects of the food and beverage operation at our luxury, full-service hotel.
This role requires a strategic leader with a deep understanding of culinary and beverage trends, exceptional management skills, and a commitment to delivering a high-quality dining experience for our guests.
The Director of Food & Beverage will collaborate with various departments to ensure seamless operations and contribute to the hotel's overall success and reputation.
Key Responsibilities :
Daily Operations Management :
Supervise and manage the daily operations of the food and beverage department.
Ensure quality and presentation standards are consistently met.
Guest Relations :
Personally respond to guest comments and complaints promptly.
Purchasing and Inventory :
Oversee purchasing and inventory functions, including managing a checkbook and processing invoices.
Budgeting & Forecasting :
Participate actively in the annual budget process and weekly forecasting.
Payroll Management :
Ensure accuracy and timely processing of bi-weekly payroll.
Staff Training & Development :
Train staff for job competency, ensuring awareness of hotel policies, service standards, and cleanliness.
Implement and monitor staffing levels to meet guest satisfaction and cost control.
Hire, train, manage, develop, and evaluate all food and beverage employees.
Recommend and initiate salary, disciplinary, or other staffing / human resources actions as needed.
Compliance & Safety :
Monitor compliance with brand requirements in both kitchen and front-of-house operations.
Enforce food sanitation and safety procedures.
Scheduling & Staffing :
Manage weekly scheduling to align with hotel forecasts.
Financial Oversight :
Monitor food and beverage sales, costs, and departmental profitability.
Contribute to the preparation of the annual departmental operating budget.
Quality Assurance :
Review standards to ensure alignment with brand and hotel requirements.
Staff Relations :
Address staff inquiries and issues professionally and promptly.
Banquet Coordination :
Work with the sales and housekeeping departments to ensure banquets meet BEO requirements and guest satisfaction.
Leadership :
Demonstrate positive leadership characteristics to inspire employees to exceed standards and guest expectations.
Security & Maintenance :
Maintain procedures for the security and proper storage of food, beverage products, inventory, and equipment.
Ensure all food and beverage equipment and facilities are operational and clean. Notify Engineering of any maintenance needs.
Inventory Management :
Conduct inventory according to established procedures and assist with determining stock levels.
Regulatory Compliance :
Ensure compliance with all hotel and brand policies, as well as local, state, and federal laws.
Marketing Support :
Develop and implement local food and beverage marketing programs; support system-wide promotions.
External Interactions :
Interact with guests, vendors, regulatory agencies, and other contacts as needed to ensure satisfaction and compliance.
Qualifications :
Previous food & beverage experience within a luxury hotel / restaurant setting.
Previous management experience.
Certificate in Food Sanitation a plus.
Certified food handler
Ability to work in a fast-paced and high-volume environment.
Strong verbal and written communication skills.
Ability to motivate and train employees in guest services.
Additional Responsibilities :
Serve as Manager on Duty or assist with other duties as assigned.
Adhere to all work rules, policies, and procedures established by the hotel.
Flexible scheduling to accommodate business demands, including working shifts beyond the preferred or normal hours.
