Scope of Position
The Stewarding Manager is responsible for supervising utility stewards and dishwashers to transport and clean cooking utensils and service ware in the hotel's continuing effort to deliver outstanding guest service.
He / She is responsible for the day-to-day operations of a kitchen utility department, including the dish room, back dock, and banquet plating.
The Stewarding Manager also assists in maintaining a safe and sanitary work environment and ensuring that all procedures are completed to the hotel's standards.
Position Requirements :
- Professional demeanor appropriate for a resort environment.
- Two years of Stewarding / Dishwashing experience required.
- Previous supervisor / management experience is required.
- Knowledge of proper chemical handling, cleaning techniques and use of equipment / machinery.
- Food safety certification is required.
Responsibilities
- Supervise daily operations in the stewarding department to ensure efficiency and goal achievement.
- Maintain appropriate staffing levels and plan training to enhance team performance.
- Create a positive work environment that promotes teamwork, and associate satisfaction.
- Oversee hiring, training and ensure associates are following policies and regulations.
- Supervise, support and monitor utility stewards, dishwashers and temporary associates.
- Communicate with other departments to ensure smooth collaboration and operational efficiency.
- Attending all catering and banquet meetings.
- Supervise cleaning of work area and physical surroundings.
- Prepare equipment according to set-up / event order sheets and ensure to follow through on banquet support and needs.
- Ensure all food and equipment are delivered on time to all functions as specified.
- Anticipate kitchen and restaurant service needs throughout the shifts and ensure requirements are met according to specifications.
- Ensure the kitchen / dish washing station is clean, well maintained and always organized.
- Schedule, assign daily work, inform and train associates.
- Ensure all regulations follow state / local health departments according to the hotel requirements.
- Consistently adheres to SDS (Safety Data Sheet) information related to the proper and safe use of chemicals in the workplace.
- Knowledge and proficiency in operating industrial dish washers.
- Check all chemical levels and inventory.
- Practice proper food handling procedures, cleaning and storage of containers, use of cleaning chemicals & PPEs.
- Perform any other reasonable duties as required by management.
Education :
High school diploma or GED.
Skills and Abilities
- Ability to communicate in the English language. Second language is a plus.
- Ability to work flexible schedules including holidays and weekends and able to perform multiple tasks.
- Able to handle high heat and moisture.
- Knowledge of basic food handling policies and procedures as well as the techniques and equipment for preparing and presenting food products for consumption, including storage / handling techniques, proper chemical handling, and sanitation standards.
Physical Requirements
- Must be able to work in a fast-paced environment.
- Must be physically fit in order to lift, pull and push items up to 100 pounds.
- Also requires reaching overhead / standing / walking / reaching and bending throughout shift.
