Summary
As an entry level culinary position, the Cook I coordinates daily food portioning, basic preparation of food items and support for Cook II in their production needs.
Duties / Responsibilities
- Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in boilers, ovens, grills, fryers and a variety of other kitchen equipment.
- Ensure production of prep items, check prep list and inventory on-hand vs. projected needs.
- Maintain and operate equipment properly.
- Ensure proper handling / storage of all products in accordance with standards and sanitation.
- Portion food products according to standard portion sizes and recipe specifications.
- Maintain the standards of preparation and presentation of all food products.
- Participate in menu item planning, prep and presentation.
- Stock and maintain sufficient levels of food products at line stations to assure smooth service.
- Operate and maintain the cleanliness of various equipment needed to prepare and serve menu items.
- Always works as a team player. Is capable of being cross-trained at the discretion of management.
- Assist on cook line in preparing meals for dine in guests within an outlet.
- Displays knowledge of food and beverage available in outlet. This includes ingredients and manner of preparation for all dishes and other items served in the outlet.
- Displays knowledge of proper food presentation including handling, garnishing and serving of all food items.
- Participate in special events and banquets.
- Maintain knowledge of Casino and department promotions, programs, and services.
- Must be able to work posted scheduled shifts. (Scheduling is based on the needs of the Casino.)
- Maintain cleanliness and sanitation of all department outlets according to Soboba Casino standards.
- Is willing and capable of following directions from Leadership team at all times.
- Is capable of working in a safe and clean manner and reports all unsafe conditions immediately to supervisor or takes personal responsibility if supervisor is not immediately available.
- Must be physically present to work a regular, reliable, and predictable work schedule in
- accordance with business demands, and maintain a consistent and regular attendance record.
- Perform special projects and other responsibilities, tasks, or duties as requested.
Education / Qualifications
- Must be 18 years of age, or older.
- High School Diploma or GED equivalent preferred.
- Must possess knowledge of knife use and safety.
- Must possess knowledge of various kitchen equipment.
- Firm understanding and practical application of health and safety standards.
- Must be able to work in a smoking environment.
- Must be able to work any day of the week and scheduled shift.
- Any combination of education, experience and training that provides the required knowledge, skills and abilities.
- Must be able to provide evidence of eligibility to work in the United States of America.
Certificates, licenses and registration
- Ability to obtain and maintain a valid Soboba Tribal Gaming Commission license.
- Required to submit to and obtain negative results on all drug and / or alcohol testing.
- Required to have a valid Riverside County Food Handler Card and / or ServSafe Certification, or obtain same upon hiring.
