Denver is about to get one of Portland’s finest. Chef Carlo Lamagna, a 2022 James Beard Award finalist who was also named one of Food & Wine’s Best New Chefs in 2021, is partnering with The Culinary Creative Group to bring you Magna Kainan, a Filipino restaurant.

Magna Kainan, a more upscale, woodfired approach to Filipino fare, will be a sister restaurant to Lamagna’s original spot, Magna Kusina, which he opened in Portland in 2019 and was named Portland’s best restaurant in 2021 by the Oregonian.

Kainan means eatery in Tagalog.)

PURPOSE

The Prep Cook is responsible for providing a supportive role to kitchen staff in the preparation of meals and ingredients.

This role performs various food preparation, cooking, and cleaning tasks to ensure the kitchen remains efficient in creating and delivering dishes for guests.

ESSENTIAL DUTIES & RESPONSIBILITIES

  • Completing all tasks, in order, on the prep list from the Chef or Kitchen Manager.
  • Labeling and stocking all ingredients and food items.
  • Washing, chopping, and sorting ingredients like fruits, vegetables, and meats.
  • Measuring quantities of seasonings and other cooking ingredients.
  • Parboiling food, reducing sauces, and starting first steps in various dishes.
  • Cleaning dishes, washing cooking utensils and cookware, taking out the trash, and sanitizing kitchen and / or workstation during and after service;

keep up on washing all dishes when there is no designated dishwasher on duty.

  • Adhering to all relevant nutrition and sanitary regulations and standards.
  • Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply.
  • Putting away orders and organizing the food storage areas.
  • Perform other related duties as assigned.

REQUIRED KNOWLEDGE / SKILLS / ABILITIES

  • Passion for great food and ability to consistently produce amazing food for our guests.
  • Understanding of industry-standard best cooking and preparation practices.
  • Familiarity with safe and sanitary food handling and preparation.
  • Excellent organizational, time management, and multitasking skills.
  • Great collaboration and teamwork skills.
  • Ability to follow procedures and hold yourself accountable.
  • Ability to work under pressure and deal with stressful situations during busy periods.
  • Maintain a positive attitude and contribute to a positive team environment.
  • Ability to take direction and feedback extremely well. Learn from mistakes and be able to react and respond quickly to issues.

Ability to stand for long periods of time.

QUALIFICATIONS / EDUCATION :

  • High school diploma or GED.
  • 1+ years of restaurant kitchen experience.
  • Must be able to work a flexible schedule including opening, closing, weekends, and holidays.
