Reports To : Steward Supervisor SousChef
Profile : TheKitchen Steward position provides the support and backbonenecessary to make the kitchen run smoothly and efficiently on adaily basis.
While the positions primary focus is cleaning servingware glass flatware pots and pans also it is important that theposition removes and organizes trash and recycling and cleans thekitchen floors shelving andequipment.
SpecificResponsibilities :
- Reportsto work on time and ready to work scheduledshift.
- Breaks machine down properly in order tothoroughly clean all parts.
- Changes water inmachine and cleans all debris baskets once anhour.
- Keeps all chemicals full during serviceso machines are cleaning properly.
- Informssupervisors if low on soap products (solid power solid brilliancesilver fusion).
- For the threecompartment sinkkeeps the wash rinse and sanitizer tank water fresh changing atleast once an hour.
- Makes sure there aresanitizer test strips present.
- Keeps shelfabove the sinks organized and dry.
- Takes outtrash and recycling at specified times or when needed duringservice.
- Makes sure hand sinks are stocked withsoap and hand towels throughout the workday.
- Maintains cleanliness and organization ofboth dish stations.
- Maintains an organized soiltable so there is a proper landing spot for all dirtyitems.
- Keeps all soaking basins clean andfresh.
- Stores and organizes BOH spacedaily.
- Stores and organizes nonF&Borders.
- Removes boxes from receiving area andmaintains slop sink in the back of thekitchen.
- Maintains cleanliness and organizationof glass rack storage area.
- Performs allopening and closing duties as outlined bysupervisors.
